Bean salad for the winter (recipe from my mom)

Ingredients

Beans (dry) 3 tbsp.
peeled carrots 1 kg.
tomato 2 kg.
bell pepper (peeled) 250-300 gr.
vegetable oil 200 gr.
salt 2.5 tbsp. l.
vinegar 9% 4.5 tbsp. l.
sugar 300 gr.

Cooking method

  • Soak the beans overnight, drain the water, pour in new ones and cook until almost cooked. You can take any beans that are and what you like.
  • Grate the carrots on a food processor or a coarse grater. I rub the harvester on the largest grater, it tastes better.
  • Pass the tomatoes through a meat grinder.
  • Cut the pepper into strips or cubes, it doesn't matter.
  • Mix carrots, peppers and tomatoes, add sugar, salt and vegetable oil, stir and put on fire, cook for 30 minutes after boiling. Do not forget to stir.
  • After 30 minutes, add vinegar and beans to the vegetables, mix, cook until the vegetables are fully cooked and the desired consistency, I have it for another 30 minutes.
  • We put the finished salad in sterilized jars, roll up and wrap it until it cools.
  • Bon Appetit!

Delicious salad that can be eaten as a side dish, as an appetizer, or tossed in a broth and get a bean soup. The recipe was given by my mother, my husband is moaning with delight when eating this salad. It is quite simple to prepare, but very quickly and invariably popular on the table.
The output of the finished salad is 8-10 cans of 0.5 liters.
Why such a spread? Different beans, different juiciness of carrots and tomatoes, the desired consistency is also different, my mother does not boil at the end for a long time, it turns out a more liquid consistency and 10 jars, I boil - I have 8 of them.
