Thank you.
That is, as I understand it, the dough for oatmeal cookies should not rise, walk and ferment?
It turns out that there is no point in even kneading in a bread maker.

But thanks for the recipe. try

sushi - thank you so much for the recipe, the cookies are sooo delicious
How many eggs do you need: one or two? I put two, because it seemed to me that the mass was rather dry - as a result, the cookies spread out on the baking sheet. There is a similar recipe for coconut cookies (my sister-in-law makes very tasty), instead of oatmeal, you need to take 250 g of coconut.

Mouli
Here's my recipe for oatmeal cookies. I learned from my grandmother, I add only coconut from myself:

2 cups oatmeal (300 ml cup) - or 600 ml oatmeal
100 g butter
0.5 cups sugar - or 150 ml sugar
2 eggs
2-3 tablespoons flour
50 grams of coconut flakes (without it)
Lightly fry the oatmeal in butter until they turn golden brown, and you need to stir all the time ... so that they do not burn. Pour into a bowl, let cool slightly. In the meantime, beat eggs with a couple of tablespoons of sugar. Add flour to the Fried Flakes, stir thoroughly, add beaten eggs, coconut and the remaining sugar, you can also add a teaspoon of vanilla. Mix everything. I spread the dough with a teaspoon on the baking sheet. The dough should be thick enough, it should not spread, but not dry either. If suddenly it seems that the dough is dry, add another egg. I bake on the upper tier of the oven for 10-15 minutes at 180 degrees Celsius, but the time and temperature are very individual - it all depends on the oven. Just watch the cookies, as soon as it becomes rosy, you can pull out, because only the eggs should be baked there. If the cookies are overexposed, they become hard after cooling. True, this rarely happens to me ... they eat it still warm, even if it is overexposed. And you can add all kinds of additives to cookies - nuts, raisins, etc. In my family they love it with coconut

I also have a recipe in my notebook for a long time:
250 gr. flour
250 gr. oatmeal
200 gr. Sahara
1-2 eggs
200 gr. draining. oils
1 tbsp. l. honey
0.5 tsp soda
some citric acid and nuts.
Mix everything thoroughly, put into small piles and bake at 200 * 30 minutes.
I saw this recipe 15 years ago in the Female with Makarevich. I even remember the whole transmission in fragments.
The Oatmeal Fool is also discussed here, all from the same opera with cereals.

I form balls with wet hands, compacting the mixture, and spread them on a baking sheet sprinkled with water.
And the dough composition and obligatory frying are the same as in Mouli. Only I don't put in flour at all. Nothing falls apart.

And my family is very fond of soft oatmeal cookies. Well, that is, the outside is crispy, and the inside is soft. I found this recipe on the Internet with many rave reviews, tried to cook it, now they ask not to make any other oatmeal yet. By the way, it is prepared quickly and easily.
Output: 4 dozen
cup = 240 ml
200 grams of butter, room temperature
1 cup brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon of vanilla essence (extract)
1½ cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
a pinch of salt
3 cups oatmeal (raw)
1 cup raisins (optional)
1 cup walnuts (optional)

Preheat oven to 350F (175C).

In a large bowl, rub the butter and sugar until fluffy. Add the egg one at a time, then the vanilla, rubbing well after each addition. Add flour, salt, baking powder, salt and cinnamon to the butter mixture and stir well. Then add the oatmeal, raisins and nuts, if you are using them, and stir well. No need to whip and mix thoroughly.

Spread the dough on a baking sheet in heaps on a heaped tablespoon, at a distance of 3 centimeters from each other.Bake the cookies in the preheated oven for 10-12 minutes, or until the cookies are browned. Leave the cooked biscuits on the tray for one minute, then transfer to a wire rack to cool. Store cookies in a tightly fitting container.

I used oatmeal of slow cooking, and the one that needs to be cooked for 10-15 minutes.
If there is no brown sugar, no big deal. Take the usual one.
When I took it out of the oven, I was tempted to leave it longer, it was very soft even outside. But after cooling it turned out just right.
If you overexpose in the oven, you will not get soft, but crispy, crumbly cookies. For the second time I did just that, I also liked it, but I love the soft version.

I almost always have oatmeal cookies at home. The whole family likes it. I bake according to GOST, slightly modified for myself. Maybe this is already TR? But it doesn't matter, the main thing is very tasty.

Wheat flour - 320 gr
Ground oat flakes - 160 gr
Sakh. sand - 220 gr
Grape juice, boiled down to honey density - 40 gr
Softened butter - 160 gr
Chopped dark raisins - 60 gr
Soda - 5 gr
Salt - 4 g
Cinnamon, vanillin - on the tip of a knife
Serum - 75-90 gr
Thoroughly grind butter, sand, cinnamon, vanillin, raisins (10 minutes), add, stirring, oatmeal, pour in hot whey with salt dissolved in it. Mix again for 10 minutes. Then we add the wine. juice and flour mixed with baking soda. Knead quickly until a homogeneous dough is obtained. It makes 27 cakes. We bake them at 180-200 gr for about 10 minutes.
The edges should be browned and the middle should remain soft.
Bon Appetit.

I tried it. Somewhat unexpectedly, I did not think that the seemingly dry mass with flakes would creep so much, I was afraid that there would be muesli in the oven at all. It turned out to be one big cookie for the whole length. It tastes nice, a little like kazinaki, not a cookie, although maybe I just dried it a little - it's hard to set the exact temperature on my oven. I will try again later - I will put them as far away from each other as possible and in more "piles" (I just laid it out immediately in the form of cakes). Thanks for the recipe - simple and original. I did it not with pure oats, but with a mixture of cereals.

P.S. As you can see, the cookies are blurry, so you need to choose the optimal shape and distance between before placing them in the oven.

I have a 58-year-old cookbook with great oatmeal cookie recipes that have been tested by time and our family.
1. Oatmeal cookies with nuts
For 550-600g cookies you will need
Oat flakes 2 tbsp. (250 ml glass, ordinary kitchen spoon, with a slide)
Flour 1 tsp
Granulated sugar ¾ tbsp.
Oils 100gr
Eggs 2pcs
Nuts (peanuts) ½ tbsp
Vanilla sugar 1g or zest from 1 lemon or orange, or liqueur 1h. l.

Grind the butter with sugar and aromatic substances until whitening and, rubbing, add eggs one by one. When sugar grains disappear in the mass, add oatmeal, after mixing them with wheat flour and finely chopped, slightly fried nuts.
Stir the dough lightly and take with a teaspoon, and with another spoon, push it onto a greased baking sheet. It is better to bake on a silicone mat, but they used to bake without it. Bake for 15-20 minutes at 170-200 degrees, then carefully remove the cookies from the baking sheet. The cookies are crispy, tender, I will not say about hygroscopicity - on the second day there were no more.

2. Oatmeal cookies with honey
For 750-800g of cookies you will need
Oatmeal 1 tbsp. (250 ml glass, ordinary kitchen spoon, with a slide)
Flour 1 tbsp.
Sugar 1/2 tbsp.
Honey ½ tbsp
Sour cream ½ tbsp
Egg 1 pc
Oils 100gr
Soda ½ tsp.

Mix flour with baking soda and sift through a sieve. Grind the butter with sugar until it is white, add honey, sour cream, an egg, oatmeal and, finally, flour with soda while stirring. After the flour, mix everything for 1-2 minutes, roll out the dough with a rolling pin into a thin cake (3-5 mm thick) and make different figures out of it with recesses. Bake cookies for 10-15 minutes at a temperature of 200-220 degrees.
It turns out a kind of shortbread, good with tea.

Though I am a "young baker" - yes, I am too many years old, so I dare to recommend a simple but delicious recipe for oatmeal cookies: 1-satakan flour, 1.5-stack. Oatmeal, 200- Margarine, 0.5 cups of sugar, 1-st. spoon of honey, 1- egg, 0.5- tsp. l. soda or baking powder, Bake at 180-200 gr. Who does not like sweet cookies, reduce sugar, spread with a tablespoon, since the mass is sticky, do not be afraid that they look shapeless, they will spread a little when baking and become very decent. Ostkov from him - not to find in an hour. Be healthy!
