Canned tomatoes without vinegar

Ingredients

red tomatoes 2 Kg
salt 2 tbsp. l.
sugar 5 tbsp. l.
spices to taste

Cooking method

  • Everything is extremely simple.
  • Put your favorite spices in sterilized 3-liter jars on the bottom, then fill with washed tomatoes. Tomatoes for this recipe must certainly be taken from red varieties, they have natural acid.
  • I do not like sterilization and I do everything three times.
  • Pour boiling water over the prepared jars, cover with a sterilized lid and stand for 15-20 minutes. Pour the water from the jar into a saucepan, boil and pour it back into the jar, stand for 10 minutes, drain into the pan. Add salt and sugar to the last filling, bring to a boil and fill the jar to the very top and roll up. Turn the jar over and leave it under a fur coat until it cools.
  • YES, NO VINEGAR IS NECESSARY !!!

On the forum I found two similar recipes, but more laborious. I have been making such tomatoes for the third year already, we really like them, because the ulcer husband can eat them indefinitely.
Tomatoes are perfectly stored in the apartment, I don't have a cellar.
The photo shows a can of tomatoes with the date of sewing, and it was opened on January 27. I have a few more cans of these tomatoes, they are great.
Tomatoes are very tasty, no one ever guessed that they are without vinegar, I say - they don't believe! And the brine is drunk without fear of stomach irritation.
I understand that I am posting the recipe at the wrong time, but who needs to be found and done.

Instead of vinegar, preservation can be done with citric acid, it is much milder tolerated by the stomach, even gastroenterologists recommend it instead of vinegar. I cover tomatoes with lemon, and there are recipes here on the forum.

I just don't eat up 3-liter jars right away, so I make them smaller in jars and it's more convenient to calculate the amount of salt and sugar.

But in this jar there is no pepper only because of its absence at that moment (they just ate it, and the new ones have not yet grown).
I have a recipe (in profile) for tomatoes with marigolds, there are no spices at all, only a plant. Delicious! And this year I also made tomatoes without spices, but with carrot tops. These two recipes are very similar in taste and aroma.

polliar, a 3-liter can contains approximately 1.2 liters of water. When I make jars of smaller capacity, I always measure its volume when draining water. Further, according to the proportion, I count salt and sugar, and pour it into the brine.
