Pumpkin buns In the footsteps of Craffins

Ingredients

Dough:
dry yeast 1 tsp
wheat flour c. from. 250-270 g
pumpkin puree 180 g
milk 50 g
salt 0.75 tsp
sugar 60 g
butter 35 g
Filling:
butter 100 g
Additionally:
powdered sugar for serving

Cooking method

  • Cut raw pumpkin (about 350 g) into cubes and cook until soft in any convenient way: in the microwave (drain excess moisture, if any after cooking), in a double boiler or bake in the oven. Purée and cool.
  • Mix yeast with 230 grams of flour, add pumpkin puree, warm milk, salt, sugar. Knead for 8-10 minutes.
  • Add softened butter and the remaining flour (it may take a little more or less depending on the moisture content of the flour and the consistency of the pumpkin puree). Knead a smooth, non-sticky dough.
  • Leave the dough to ferment at room temperature for an hour and a half. In the middle of fermentation, knead the dough once.

  • Put the dough on the table, knead, divide into three equal parts. Dust the table with flour.
  • Roll one part of the dough as thin as possible into a "tongue", grease with softened butter.
  • Roll up on the long side.
  • Gently roll the roll on the table, stretching it along its length.
  • Cut with a sharp knife (lengthwise) into two parts.
  • Expand with slices up. Roll each of the resulting parts of the roll with a "snail" (separately, to make two buns).
  • Place in prepared muffin molds (grease metal molds with vegetable oil).
  • Form four more dough pieces from the remaining dough according to the same principle.
  • Proofing under the foil for 50-60 minutes at room temperature.
  • Bake the rolls in an oven preheated to 220C (convection 200C) degrees with steam for the first 7-8 minutes, then lower the temperature to 190C (convection 170C) degrees and bring the rolls to readiness.
  • Remove the finished rolls from the molds, cool a little on a wire rack and sprinkle with powdered sugar.
