In principle, it was possible to beat 6 such large eggs. I don’t know whether the whisk would have sunk all over or not - when whipping in the center, a funnel formed, which did not allow the whisk to sink to the end, and the larger volume was around the circumference, it closed the 4 L mark. The mixer stopped, raised her head, everything settled down evenly, about 3.5 liters.
Then she intervened with a souffle (I wrote myself a gift for NG) a glass of flour with a mountain (volume 250) and 3 tbsp. l. starch. I immediately poured all the flour onto the eggs, not in a mountain, over the entire surface. I didn’t time the time, I didn’t interfere for long, I watched so that there were no lumps of flour. The dough settled to 3 liters.
Form 27 cm in diameter, 6 cm in height, filled somewhere 4.5-5 cm. As the girls advised, covered it with foil. In the oven, the dough rose to the brim, but then the middle settled to the initial level, I think the flour was not enough for such eggs.
