Red bell pepper 1 kg
Onions 750g
Garlic 150g
Fresh coriander 2 bunches
Parsley 1 bunch
150 gr hot red pepper
Wine vinegar 9% 1.5 cups
Ground fenugreek seeds 1 st. l
Sunflower oil for frying

Cooking method

  • Peel the eggplants, cut in half, sprinkle with salt. After an hour, rinse with running water. Fry in sunflower oil until cooked through. Cut the onion into quarters and simmer. Cut the bell pepper into strips and simmer too. Cut the cooled eggplants across 1-2 cm wide. Peel hot peppers from seeds. Pass the greens, garlic, and hot peppers through a meat grinder. Put all the ingredients together. Stir ... Try it with salt. Place in a dry jar, cover with a plastic lid. Store in the refrigerator !!!!! Doesn't deteriorate until spring.

Dear Gayane, thank you so much for the recipe, I prepared a full portion, it turned out 3 liters, very tasty; I added wine vinegar in half and the usual 9%, but if you use only wine, it will be even tastier in your recipe, since it has its own taste and aroma, added the grain of one pomegranate.
