Albina
Radushkawhen you brew this tea, is there a raspberry flavor? Or do you not brew it as a mono tea?
Radushka
Albina, brew like mono! Taste as well as aroma. Raspberry jam. Only savory. Well, or, if you have tried it before, dried raspberries (berries). Is very similar. No acidity. I did it with the addition of berries, there is sourness there. I like no berries better
Borisyonok
Radushka, What a miracle recipe!
Now we need to start shaking the neighbor with the leaves, and maybe run into the forest ... I found a huge raspberry tree last year.
And remove everything from the freezer for now ... and let it wait in the wings!

I've already missed a lot with my renovation ...
And I almost missed such a detailed recipe ...

Radushka I want to say thank you so much for the recipe for this tea !!! : hi: I passed it at first, I was afraid that it would not work out, but everything worked out great !!! In fact, everything is simple and not scary !!! : girl_wink: Thanks again for sharing, be happy
Radushka
Tatyana, Elena, do raspberry! And even if its granules are not as strong as we would like, but the taste, color and aroma make you forget about the ma-a-a-a-a-scarlet flaw!
Drink to your health and treat your loved ones!

Borkovna, Helen, who told you that you can 500? I don't do less than 1 kg. Better than 1 kg 200 g or 1 kg 300 g. Then you get a batch of up to 500 g of dry tea. Collect more leaves. You will have time to do it!
RADUSHECHKA ... when I read the recipe for the first time, 500 grams of raspberries were written ... I thought that it was written about the leaves, and not about the finished tea. I already know as our Father what is needed for fermentation of 1 kg or more ... And then I was so happy that only 500 g, I thought that an exception to the rule ... then I will continue to collect.
Altyn
Thank you so much for the recipe! Did and will do more and more! Loved the tea! To be honest, I didn’t even expect it to be so tasty and aromatic! Everything was done by hand, since the son came on vacation! And when it was drying, guests arrived, so they thought that I was cooking berry compote! I collected leaves of forest raspberries, we have a lot of them, and garden ones too! Thanks again!
Komiolga
Radushka, thank you very much for the topic and the recipe! Can you please tell me if I could spoil raspberry tea with a long fermentation? Collected 1.5 kg. leaf, garden raspberry, wilted in a diaper. After that, the leaf lay in the freezer for two days. After defrosting, the leaf was dark on top, silvery below. Very easy to roll into rolls. But I fermented it for 16 hours, then cut the rolls into small sausages and dried in the oven, first for 10 minutes at 150, then dried them at 100 degrees in the oven. Immediately after fermentation, the tea did not smell very pleasant, it did not smell of raspberries at all. It smelled like cheap Chinese tea in disposable pills. After drying, the smell remains the same, and the taste is one-to-one like Chinese tea tablets. While lying on dry fermentation, after a week of storage, the smell has not changed.

Fair? I do not know. I haven't fermented tvk for a long time. BUT ... last season I had a raspberry cut tea that was fermented for 12 hours (before drying). But, I dry for a long time, since the oven is very small. I think the last portions were fermented for 16 hours already. Yes, the tea was not as aromatic as the one that was fermented for 8 hours. But, tomorrow I will try to brew last year's leftovers and describe my impressions.
I think it's too early for you to get upset. After a couple of months of dry fermentation in an airtight jar, everything will be fixed.
This season I have all teas fermented for 4 hours. Because I started doing two parties a day. I can already see that tea comes out much more aromatic. At least the one made with raspberries
Komiolga
Radushka, thanks for the answer and for sharing your experience, I will try to make the second portion differently. My raspberry leaf is very dry, if you add a little raspberry to it to increase the humidity when twisting through a meat grinder? Will the fermentation time change from this? I really want fragrant raspberry tea
Elena Kadiewa
Komiolga, look in the "fermented garden tea" on the first page for a link. There from Natasha Koval tea with added berries.
Radushka
Olga, Lena has already answered you. I subscribe to the recommendations. I don’t like it with berries, but girls do and don’t get enough of it!
Komiolga
elena kadiewa, Radushka, thanks, I read it!

Do not grind raspberries through a meat grinder at all, they are clogged immediately. I had to cut it into small strips with a knife. Whether it will turn out tea from them or not, who did that share your experience.

I think it depends on the meat grinder. I do not get clogged with raspberries (only cherries).
Fine tea comes out of the cut! One drawback - it takes up a lot of space.
Anatolyevna
alex52860, Everything is fine, I didn't even think the meat grinder was clogged!
Poured into a bag, it is being dried up!
Vinokurova
All, Radushka!. made your name tea))) aroma I will tell you !.
Thanks for the details ... and from my details - fermentation for 24 hours ... and frying and drying, everything is like yours)))
Radushka
Vinokurova,AlenKa, and why did you ferment for so long, if not a secret?
Vinokurova
There was no time .. in the evening I dried the blackberry, went to bed late, rushed off to work at the thrombot .. as soon as I came, so immediately to the oven !. I can't sleep for three hours all the time, I miss (((
Today in the morning I managed to scroll through part of Ivanushka, in the evening the rest)))
sveta-Lana
I’m a little tight, but I ran it through the meat grinder twice, but the granules all crumbled at once
I did everything according to the recipe, dried, froze
what's wrong?
it is drying now, the smell is delicious
Radushka
Quote: sveta-Lana
what's wrong?
It's like that. She crumbles into dust for many. Three options. Either the raspberries are different, or the time is different (already the second half of summer), or the weather is different (the recipe states that we had constant rains then).
This will not affect the quality of tea in any way,Svetlana, it will be delicious!
sveta-Lana
Radushka, thank you reassured, otherwise I was already thinking that I was mistaken in something.
we just had a heat of +35
Quote: Radushka
we had constant rains then
such a thought flashed, but what if before twisting the leaves to sprinkle with water or is it too much?
Radushka
sveta-Lana, last season I twisted the autumn ones, so I sprinkled them. It doesn't help! The leaves have some kind of structure ... they crumble right into the dust. This year I will only mix the autumn with an apple or pear. And I'll leave mono again until spring, probably.
By the way, early and late raspberry leaves even freeze differently! Those that after the spring rains, when they defrost, become so ... lethargic, in short. And those that gathered in heat and drought, those, like dry leaves
sveta-Lana
I messed up something with the tea
while it was drying in the oven, at the beginning the smell was not strong, but tasty, then the smell stopped, or maybe I sniffed
I had no time and after an hour I turned off the oven and left the leaf in it to dry, gradually the oven cooled down (the door of course was ajar), the tea stood in it for 6-7 hours,
then I began to pour it into a pillowcase, but did not feel any pleasant smell,
I hung it and now it hangs over my head and every time I approach it, I feel some kind of unpleasant smell, I don’t understand what it smells like, it’s been hanging for a day, nothing has changed
I decided to brew while it was brewing, sniffing in a pillowcase, trying to determine what it smells like, and suddenly it dawned on ... dried fish
the truth is, the brewed does not smell as strong as dry, the color turned out to be rich, like that of black tea, the taste is tart, the taste is certainly not fishy, but I cannot understand yet
probably ruined it and what should I do with it now? straighten or throw away?
Barquentine
Gathered yesterday the leaves have fallen half a day. But there was a crunch. Gathered in a bag, spent the night in a bag and today was the day while I was at work. Got it smell sour. Some turned black. Sour?
Elena Kadiewa
sveta-Lana, if the fish means somewhere screwed up! And dried tea does not smell like anything, it has been written about it many times. Take it away for now, maybe it will straighten out, in more detail Radushka will answer, this is her "strong point".
BarquentineWhy wasn't it wrapped in cloth and put in the refrigerator?
Wait for the hostess.
Radushka
sveta-Lana, https://Mcooker-enn.tomathouse.com/in...80.0- underwhelmed?
- the leaf was after the rain?
- was the sheet washed?
- the tea is still dry?
You don't need to throw anything away. You will always have time to do it.
My raspberries never smelled like fish. Ah, here, the strawberries smelled last season. And strong. there was one and a half kg of dry tea ... It's good that I didn't throw it away. After 8 months I opened it - the fishy smell was gone. I didn't like the mono version, but very much when mixed with others. The strawberry leaf was dirty then and I washed it before withering. I believe that this is the reason for the fishy smell. Although ... who knows?
Can you describe the whole process in detail?

Barquentine, NataliyaWell, where did YOU see someone here leaving leaves to wither in a bag? Wrap tightly in cloth and refrigerate! I hold it for two days sometimes and nothing turns black. And you can't choose the blackened ones ?!
Barquentine
Radushkagoing home. But they changed their minds. The diaper did not guess. I will take into account the future. The whole leaf does not smell deliciously sour. I'll probably throw it out. I washed the strawberry leaf too. Now it is freezing.
sveta-Lana
Radushka, the leaf was clean and dry, there was no rain for a week, I did not wash it
wilted for a long time, came from the forest at 12 o'clock, collected the leaf in a linen bag, and so he lay, arrived home at 4 o'clock, first sprinkled all the leaves on the tables, after dinner she rolled into a diaper and he lay until lunch, then poured it into a plastic bag and put it in the refrigerator
a day later I took it out, somehow twisted it twice, the granules crumbled, fermented for 4 hours
maybe 10 minutes of frying at 130 degrees did not finish, then an hour at 100 and then switched to 50 degrees and turned off the oven, he lay there until it cools, apparently this was not enough and he did not dry out
Can he dry up in a pillowcase or put it back in the oven?
Radushka
sveta-Lana, I would have dried it forcibly. But I don’t think that the fish will leave so quickly, if, indeed, it appeared. But, since it disappeared from my strawberries, everything is possible with time. In any case, do not rush to throw it away
sveta-Lana
Radushka, thanks, I'll try to dry it out today

RadushkaI am trying this year's tea. Hachu!
While the taste is rather weak, but what can I do to hunt for a seagull!
Radushka
Antonina, well, health! I am now drinking my richest mix I did the other day. With ivanches! Already delicious! BUT ... I know it will be much tastier in a couple of months. And even tastier in a year! Do you think I'll endure it?
Zena
Radushka, tell me pliz .. it's not important .. or important .. freeze the leaves for the first time .. 2 days?
I threw it into the freezer this morning .. now I got it out .. thaw .. and again I will send it to the freezer .... tomorrow it will be possible to make tea ???
Radushka
Zhenya, of course it is possible. Simply, the more cycles, the softer the leaves in processing.Although, everyone complains that your raspberries do not give granules at all. Maybe mine won't give it now, I don't know. In May, the granules formed well. If the beauty of the tea is important, I would roll the rolls and cut them before fermentation (necessarily under oppression), if it doesn't matter ... you can twist and ferment whatever dust you have. Tea will still be delicious and beautiful when brewed
mironirina
Radushka, made her first raspberry teas. Judging by the smell, it turned out well. The first one is raspberries, apple trees, Ivanushka, all 30% and 10% strawberries. Cool line-up, right? The second - everything that was in the remnant: forest bone, hawthorn, mint, a bit of homemade lemon leaves, lingonberry, raspberry, Ivanych. The second was dried after a 2-hour fermentation at 60 grams, it was possible to preserve the smell of mint. He became weaker, but still felt. Everything hangs in bags.
I have a question. Radushka, at what stage should a distinct crimson tint appear in the smell? She seemed to do everything right, dried, freezed, fermented at +25, but, apparently, she "hammered" the rest of the components with the raspberries, could this be?
Radushka
Irina, well, in the second composition, mint and lemon (I don’t know the stoneberry, it doesn’t grow here) ... and in both Ivanushka ... Fireweed itself is very "tasty" and crushes other herbs. Raspberries are felt as soon as I start to dry. Straight, the aroma of raspberry jam! I fry dry.
If there are still leaves where to get it, make a raspberry-apple-strawberry (raspberries no more than 50% of the total weight). And dry with a fry. There will be a bright raspberry aroma. You can use raspberry-apple or raspberry-strawberry. With strawberries, more tart comes out
mironirina
Radushka, there are still leaves, but the apple tree is wild. When it froze and thawed, there was a subtle, delicate aroma. Tomorrow I'll go and pick it up. Thank you very much for your answer! And the fermentation time is not short? All the raw materials were made by quenching, so I was afraid to keep it longer.
Radushka
Irina, I now also ferment no longer than 3 hours. Last year I held 6 and 8 and even 12. I did not notice much difference in taste and aroma. I also freeze and thaw several times. I think 2-3 hours is enough for fermentation. Be sure to fry. If you haven't done it with frying before, you will understand that the aroma will be different!
mironirina
Radushka, well, I will definitely try. Thank you very much for the recipe!
Yanka
Well, my relatives cut the raspberries today, and of course, I pulled the leaves! I'll try raspberry-mono too. That's what I thought - maybe not to get granules? Scroll once through the large grate and let it crumble. It seems to me that then it should turn out not quite dust, but how small-small-leafed or what do you think?
Radushka
Tatyana. Granules are best when twisted twice. But, I have granules for the first time. Raspberries are not as dry as some
OlgHa
Hello forum users.
This year I try to make teas for the first time. I liked Ivan Chai, my husband liked the option when Ivan Chai is slightly overcooked, he called it coffee-tea and does not want to drink anything else. I ask for advice. Made recently separately from garden raspberries, irgi and strawberries. Freezer for 2-5 hours, scrolling with a meat grinder, fermentation for 15 hours in enamel pots, and in the oven for 15 minutes at 150 C and additional drying at 100 C. All brewed teas are of a deep dark color. Firstly, I don’t understand why all teas have some kind of the same and withered aftertaste and not as pleasant smell as when drying. And the main thing is that raspberry tea has a bitter taste, and after a cup of this tea it throws into a light heat and the heart pounds badly, although I love raspberries in any quantities without problems. And there is no raspberry smell either when drying, or when brewing and drinking. What am I doing wrong?
Radushka
OlgHa, good afternoon! Well, raspberries are actually a medicinal plant. Perhaps what is left in it after all the procedures is enough for you to cause such a reaction. BUT ... there is nowhere to get bitterness in her. Perhaps she fermented incorrectly?
What layer, at what temperature in the room, was it well dried beforehand? If the raspberries were not fermented, but melted, then, I think, bitterness could appear. What layer did you dry, was it mixed during drying? Is the dry taste the taste of burnt paper? Perhaps overcooked?
OlgHa
I did it on trial, a couple of months ago, practically did not wilt, rinsed the leaves with water, slightly shaking the freezer for 3 hours. Scrolled 1 time - it turned out less than a liter, put it in a saucepan, pressed it down with a plate along the entire diameter and on top of the weight. It was just standing on the table at room temperature, 25 degrees C. When we managed to get there, 15 hours passed. I put it in the oven unheated, with a layer of 2-3 cm. The temperature was initially set slightly above 150, interfered every 5 minutes at the beginning. The taste does not look like burnt paper, I think I didn’t overcook it, because Ivan Chai was overcooked once and this is not the same aftertaste. Once upon a time I read on the network that with improper fermentation, raspberries acquire bad substances, but I can't find this info, that's why I'm worried about raspberries. Is not withering before freezing can lead to this? Thanks for your feedback. I want to try again without mistakes.
Radushka
Well, that's the reason. I did NOT wither, I also washed it! I ruined strawberries last year. One and a half kg of dry tea.
Layer 2-3 cm for drying - a lot! Not more than 1 cm. Well, fermenting for so long is not worth it. 6-8 hours is enough. I ferment 4. While the last baking sheet is dry, it turns out 8 hours. Do not put oppression on the grinder! Oppression is placed on a sheet-cut

I put in the oven not heated, with a layer of 2-3 cm.
And you may have it steamed while the oven was warming up. This is in addition to the fact that Radushka already noted. The oven must be preheated before you put the tea to dry!
