I added some baking soda and baking powder. Neither soda nor vinegar can be felt in the finished cake. In the photo, the cut is lighter than in real life and the nuts were not included in the frame!

the zest does not give any bitterness at all, if cut off correctly, it is the zest that rubs, and not the white part.
