Bottom layer: regular sponge cake + a handful of NOT thawed cherries, baked in Stebe on porridge for 1 h 10 min, pressure 0.3 (thanks for this science Tanyule ), I get the most successful biscuits in Stebe.
The marshmallow is yours. I didn't make additional layers of confit or cream, and so, in my opinion, both sweet and sour

Ingredients for syrup:

200 gr. room temperature water
8-15 gr. sweetener Fitparad 7
10 gr. agar
100 g erythritol (preferably powdered in a coffee grinder)

The sweetness is regulated, depending on preference, only with Fitparad 7 sweetener, not with erythritol!
The amount of Fitparad does not affect the consistency. It is better not to touch erythritol.
We put the mixture in a mixer for 5 minutes. ... While whipping, prepare a saucepan with ingredients for cooking syrup. Mix, stir.
After 5 minutes, the puree continues to beat without stopping, and we set the syrup to cook in a saucepan. Stirring constantly, wait for boiling and after boiling, cook for another 1 minute. At maximum gas, no thermometer.
The syrup is poured into the marshmallow mass and let the mixer mix everything thoroughly for another 15-20 seconds. Next, put it in a bag. We work quickly. Mass stabilizes very quickly
