Dzyad Apple Pie

Ingredients

wheat flour. top grade 520 g (4 tablespoons)
yeast 20 g
sugar 100 g
butter 70 g
yolks 4 things.
salt 0.5 tsp
citric acid 0.5 tsp
milk 300 g
For filling
apple jam (thick) 1 tbsp.
raisins 2 tbsp. l.
dates (or wine berries) 30 g (20 g)

Cooking method

  • 1. If you are kneading the dough in a bread maker, add all the ingredients in the order shown in the instructions for your bread maker.
  • Can be kneaded with a combine. Then first dissolve the yeast and sugar in milk, add all the bulk ingredients to the flour. Knead yeast mixture and flour, then add softened butter in small pieces. Stir until smooth.
  • In the Bread Maker, I used the "pizza dough" program - it lasts 45 minutes.

  • 2. Transfer the dough to a greased paste. butter the proofing container and close it from airing - with a lid or cling film. Place in a warm place (about 30 C) until the volume doubles. I put it in a closed microwave with a glass of warm water for 30 minutes.

  • 3. While the dough is brewing, prepare the filling.
  • Pour boiling water over the raisins. Heat a glass of thick apple jam. Put raisins, finely chopped dates (or wine berries) in it. Cool it down.
  • 4. Divide the dough into two parts. It is soft and elastic.
  • 5. Bake well in a mold that breaks loose. I don't have it, so I just did it on a baking sheet.
  • Gently roll out half of the dough, being careful not to release too much bubbles. Gently transfer the rolled dough into a mold or baking sheet. The dough is soft, you need to transfer quickly.
  • 6. Put all the filling on this layer.
  • 7. Roll out the second half of the dough in the same way.
  • 8. Cover the bottom layer with the filling with the second layer. Pinch the edges.
  • 9. The cake should be greased with an egg before baking. I poured my own whipped protein with sugar.
  • 10. Bake in an oven preheated to 180 C for 15-20 minutes - until golden brown. Readiness can be checked with a skewer.

Note

This is one of the traditional pies for Velkanots - Easter. It is easy to prepare. Many sources indicate that this is a dish of Belarusian cuisine. I think that both options are correct - because there is a lot in common in Polish and Belarusian cuisine, as well as between the cultures of these two peoples.
I didn't have dates - I only added raisins to the filling, just put in more. And some cinnamon. It turned out delicious.

IamLara, any thick jam will do. Only the taste will be different. I tried this pie in rhubarb jam -

Leming, there is no apple, but you can make a quick jam, the stores are full of apples, for Easter I bake, of course, with apples it tastes better than db, but I'll try a plum one (my own plum, yellow, aromatic)
