I took 100g of "crumbs" from the rolled oats (I sift the rolled oats, if there are a lot of small, almost dusty inclusions in it, through a colander, and then, as it accumulates, I put them in the baking), pour a glass of boiling water as usual.
But instead of whey, I attached what was left of home-brewed beer, after bottling it, there was yeast sediment, so I poured less dry yeast (3g), it was possible even less dough was constantly trying to escape.
In the bag with rye flour, 120g of flour remained, it poured all of it and, accordingly, reduced the 1st grade wheat flour to 430g.

And I added these fused proteins to the cottage cheese +1 whole, no more than an egg. At neighbors' chickens, pullets lay small eggs, I asked for smaller ones for khachapuri, so they gave me three free of charge, straight pigeon in size, and for a couple of "want-puriks" I separated "extra protein"
