Ingredients

For dark dough:
Wheat flour, premium 115 gr.
Baking soda 1/4 tsp
Ground cinnamon 1/4 tsp
Ground nutmeg on the tip of a knife
Ground cloves on the tip of a knife
Butter (margarine) at room temperature 45 gr.
Brown sugar 30 gr.
Egg yolk C-2 (small) 2 pcs.
Sugar syrup (dark molasses or honey) 100 g
Sour cream or yogurt 50 gr.
For light dough:
Wheat flour, premium 115 gr.
Baking soda 1/4 tsp
Butter (margarine) at room temperature 45 gr.
Sugar 80 gr.
Grated zest of one medium lemon
Lemon juice 1 tbsp. l.
Sour cream or yogurt 100 g
Egg C-2 (small) 2 pcs.
A pinch of salt

Cooking method

  • Cooking dark dough:
  • You can use honey instead of molasses. But I am using the syrup for this recipe.

  • Syrup to replace honey (molasses) in cooking, baking and baking (Tumanchik)

  • Sift flour and soda into a separate bowl. Add spices. Set aside.
  • Beat butter with sugar until creamy. Add the yolks one at a time, beating after each.
  • Add yogurt and syrup. Beat well and add flour. Stir the dough and set it aside for now. It looks light, but after baking it becomes dark - caramel.

  • Cooking light dough:
  • Sift flour and soda into a separate bowl.
  • Beat butter with sugar, lemon juice and zest. Add the yolks from the eggs, one at a time. Then add sour cream and beat well again. Add flour mixture and beat until smooth. Beat the whites separately with a pinch of salt into a strong foam. We introduce proteins into the dough, kneading from bottom to top.

  • Grease the baking dish with a non-stick mixture. We begin to spread the dough. The dark dough is thicker, so we spread it over a full tablespoon in different places, leaving empty space for the white dough.

  • Now we spread a spoonful of light dough with another spoon in empty niches. Now again add a tablespoon to the dark dough. And again light dough to light.

  • Thus, we spread all the dough to the last drop.

  • Preheat the oven to 180 degrees. We send the cake to bake for 40 minutes. After the specified time, we check its readiness. I baked for exactly one hour.
  • Let cool the cake in the form.
