Foie Gras Pate (Written by Uncle Sam) (page 3)

SchuMakher
And to pour cognac and lope?
Uncle Sam
Cognac is appropriate 1-2 tsp before baking.

But it is more correct to savor it, looking at the pate rosy in the oven.

Inspired.
They gave the same task to different nations. Feed 1 cat with 1 tablespoon of mustard using 1 sausage.
The American gave a long lecture to the cat about its rights and freedoms, promised a sausage in exchange for voluntarily eating mustard. Result: the cat grabbed the sausage and ran away.
The German smeared mustard on the sausage and began to force the cat into the mouth. Result: a scratched German covered in mustard.
The Russian thoughtfully looking at the cat eats all the sausage. Then he dabs the cat's fur with mustard. And he continues to admire how the cat licks it from its skin ...
Alexandra
Mashenka, I smuggled in 1 tbsp before baking. l.

For my taste, it is possible and more, 2-3 tablespoons for a full serving, but I would completely remove the sweetness, it is already sweetish from carrots.

Oh, while I was writing uncle Sam already answered

In the sense of a full portion? More fillet, less liver? Tell us about the taste later - just honestly
Well, yes, fillet 500 gr, and liver - 300.
Delicious! I went to meet the tastes of my homemade ones - they are not very offal ... I did not add cream, I have very thick and fatty sour cream, eggs - 2 pcs. The rest is as in the recipe.
SchuMakher
Well, it began - one part in the micr, the other on the "baking" in the cartoon ... dear mom ...
MariV

Voluntarily and with songs
SchuMakher
So: the one in the micro, in 35 minutes at a power of 750 W, dried out a little, we will gnaw but the view is appetizing (I read with the child)

In the cartoon, it is also baked ... And in general, what consistency should it be? Cutting or smearing?
matroskin_kot
At first, it was smeared, and today, after the refrigerator, it is cut, but much more tender than my usual pate, eggs, cheese, did their job, well, the breast again. I was afraid that we will not master, we will master, we will master !!!
Joy
I cut it, but it smears very gently. I don’t know how to do it right, but what turned out to be very tasty.

And in tsarist Russia there was such a delicacy - burbot liver. To improve the taste and for the "correct" taste, live burbot was beaten to death with sticks. Under the influence of adrenaline, the blood supply in the liver increased, the liver increased in size and reached the "same" taste

I cracked this delicacy myself, since there were a couple of times when they caught burbots while fishing. We did not hit them with sticks, the poor, although they still did not escape death. The liver was fried. She, by the way, is not so small. I confirm - a delicious thing: a very delicate taste.
SchuMakher
Scarecrow luck to you

The part that was baked in the cartoon, tasty, aaaaa, soft, took out, however, in parts, tomorrow we will be eating for breakfast.
Antonovka
Mash, did you do it in a steamer bowl with paper? If so, why didn't you let the bowl cool down?
MariV

Cutting or smearing?
He is smeared.
My husband ate, I really liked (I did not tell him that there is a liver) - soufflé and soufflé.
SchuMakher
Antonovka no, I baked in a casserole ... But what's the difference in parts, or how ...
Alexandra
Masha, an exciting question, did you pour the brandy?

I turn it over from the saucepan, inserting the steamer bowl, conveniently
SchuMakher
Alexandra all that was spoons 3 turned out

I would have pulled it out with a double boiler, but then it’s necessary to shove it into the refrigerator with such a pancake, and then I put it in a small bowl in 2 rows
SchuMakher
Deffchonki and boys !! The true taste of this miracle was revealed to the shoonya in the morning! Yesterday for dinner they gnawed on a pate crouton, delicious ... But today, after a night spent in the refrigerator, the pate became fantastically tasty !!!

SergeiThank you very much !!!

PS: I'll come home, I'll try to change something, modify it, if the author doesn't mind
Antonovka
Mash, did you have a pâté crouton in the fridge? Or just the multicooker part?
SchuMakher
Antonovka a piece left over from yesterday's bickering lies in the fridge until now it hasn't softened
Antonovka
Yeah, I see
matroskin_kot
Wow, some books are read as if, but they themselves are asleep, I suppose ..., and then the micra is to blame for them.
But, it's delicious ... Even - like - crackers-foie-ha ...

And it is cut and smeared, and after standing in the walker for the second day, it becomes even tastier. Maturing ...
matroskin_kot
So, I also noticed that after standing in the refrigerator, it became tastier ... So it didn't seem to me
MariV
Yes, Ira, it didn't seem - tastier!
SchuMakher
Yes, yes, I confirm !!! Today it is definitely even tastier Even as if fatter ...
Gasha
Oh, well, this is some kind of terrible horror ... after all, I do not like the liver, but under such a nastik of figs you will resist ... I called my husband and told me to buy FSE according to the list ...
SchuMakher
Gasha oh, Ganechka, do it, you won't regret it!

My husband does not really like the liver - he slightly changed the proportions, but he did not understand what was wrong with the liver!
Gasha
Well, it turns out to be amazingly tasty !!! Uncle Sam, from the whole family, many thanks !!! "Don't you like liver? You just don't know how to cook it !!!"
Caprice
After this recipe, I just stopped making any other pate.
MariV
Yes, and I, perhaps, will only do this!
My husband today asked me to cook one of these once a week!
Alexandra
I "crossed" the Foie Gras recipe with "Terrine with Peaches" from Omela, I added something from myself - it turned out to be a "ceremonial version", and the consistency is more "varied" - with pieces of breasts and sweet pepper

Thanks again Uncle Sam!

Foie Gras Pate (Written by Uncle Sam)
Omela
I looked at this recipe for a long time !!!! So long that I learned it by heart ... I thought. Made from turkey liver and breast. First, I fried onions and carrots, then stewed everything in Kukushka on Multipovar 110C, 10 minutes. Instead of cream - milk and sour cream. When I poured it into the mold, it seemed to me the consistency is too liquid ... so much that the sour cream stains simply drowned. I went to check the recipe - it turns out I forgot to put the cheese. But even in this version, it is sooooo tasty !!! There is not much to photograph, but so, for the sake of order I clicked.

🔗

Uncle Sam, thanks! I will definitely repeat.
izumka
Uncle Sam, I apologize that without a photo, I did not have time to take a picture before serving, and after ... not a crumb was left! All guests really liked it !!! Thanks for the recipe!
Midnight lady
SchuMakher,
How long did you bake in the slow cooker?
For now, I'm choosing between an airfryer and a cartoon. In the oven, too, you can, but do not want to. If someone baked in an airfryer, tell me which speed to set, otherwise Uncle Sam, as I understood from the photo, does not have a speed regulation.
SchuMakher
Midnight lady It took me 50 minutes for half a serving (I think)
Uncle Sam
There would be several speeds on my airfryer, I would put the second one.
Requires even baking of the entire volume.
At maximum speed, the pate is overdried from above.
Caprice
You can cover with foil in the airfryer. Then the top will not dry out. In general, I like to bake it in the oven better ...By the way, also under the foil. I shoot in the last 10 minutes.
Midnight lady
I understood everything, thank you all for the quick help. I plan to cook on Friday and taste on Saturday. I will bake half in a cartoon (I have a small one) and half in an airfryer. I will report.
Midnight lady
I am reporting. The pâté is very tasty, it was pleasant to watch how husband and father crush it with pleasure, spreading it on bread. We tasted in nature, being in the forest. I baked most of it in an airfryer in a glass bowl, like Uncle Sam's, 35 minutes at 235 degrees and medium speed, covered with foil, which I removed 10 minutes before being cooked to bake on top. The rest was baked in a small multicooker for 50 minutes. AH pate is very tender, you need to eat it, spreading it. In the cartoon, at first it rose, but then fell off and turned out to be denser, you can eat it, cutting into pieces. But ... I didn't get the decorations, because the sour cream just drowned. I think that the paste is a little thin, next time I'll take smaller eggs (I had the largest ones), and the cream was 10% fat. Or is it something else? And it would also be nice to bake two bread, one may not be enough
Thanks to Uncle Sam for an excellent recipe, and to other members of the forum for help with advice and sharing their experience.
Lisss's
Uncle Sam, the pate is simply magical indeed, very tasty! I didn't expect it to be so similar to the most tender liver

baked in the oven longer than recommended, because after 35 minutes the middle was still watery under the finger. it tastes like a holiday! Thank you!!
Kalyusya
Uncle Sam, I report. Made a paste, baked in an airfryer. I tried it while still hot ................. Vkusnaaaaa, only I didn't guess a bit with salt, it's not enough for me ...... Although, after the refrigerator, the taste will change, I think.

Virgin, Good day to all I waited until 15 pages of delight from the pate and finally ripened. There are all products, but I do not know what the Glass oven is in. and the ceramic molds moved to a new place of residence, and left only a silicone round cake mold at home - do you think you can bake in it There is also an old Soviet-style frying pan without a handle, with such small squares at the bottom I'm waiting for advice
Joy
Irin, I would have made it in silicone - if not stored in it, then it will definitely work out beautifully from it.
RybkA
And I tried this pate. Yes, really delicious! And it is done quickly. Stewed in Elby pressure cooker, put on Meat for 8 minutes. Then I whipped everything up, put it in the oven. She baked in ceramic pots. Very comfortably. Then I put the lid on top and put it in the refrigerator. She baked for 35 minutes at 200 * C, then another 10 at 160 * C for greater importance. Very delicate and softened liver taste!

Thanks Marisha I went to conjure
