Sourdough and whey bread

Ingredients

wheat sourdough 100% moisture active 150 grams
flour c / z from durum wheat 50 grams
wheat flour / grade 350 grams
honey 1 tsp
unfermented malt (white) 5 grams
serum 210 gram
instant yeast 1 gram
salt 9.5 grams
dry ginger 0.5 tsp

Cooking method

  • Feed the sourdough 5-8 hours before mixing.
  • Mix flour with yeast, malt, ginger.
  • Dissolve honey in serum.
  • Mix all ingredients. except for salt.
  • Knead with a hook for 5 minutes.
  • Add salt.
  • Continue kneading for another 7-10 minutes.
  • The dough is soft, does not stick.
  • Stretch-fold and ferment.
  • Fermentation for 1 hour 45 minutes.
  • Stretch-fold 1 time after 45 minutes.
  • Form bread of any shape.
  • Proof in basket for 60 minutes seam up. Sprinkle the basket with flour.
  • Turn over to paper. We make incisions.
  • Baking in a preheated dish with a lid.
  • The baking temperature for the first 15 minutes is 240 degrees.
  • Remove the cover.
  • We bake until ready. I have another 20 minutes.
  • We take it out, cool it down. chop and enjoy.
