Bread with malt and soy sauce

Ingredients

Welding
fermented malt 40 grams
boiling water 80 gram
honey 1 tsp
coriander 0.5 tsp
anise 0.5 tsp
Dough

wheat sourdough 100% moisture active 150 grams
peeled rye flour 100g
wheat flour / grade 300 grams
soy sauce 75 gram
water 65 grams
instant yeast 1 gram

Cooking method

  • Welding
  • Mix all ingredients and pour boiling water over.
  • Cover, wrap and leave to cool completely.
  • Leaven
  • Feed the starter culture 5-8 hours before baking. The feeding time depends on the activity of your starter and the temperature.
  • Dough
  • The batch was made in KhP.
  • I loaded all the ingredients into the HP bucket in accordance with the instructions.
  • If you knead with a hook, then combine flour and yeast. Mix liquid ingredients and add flour.
  • In KhP I have included the program "dough". Kneading 20 minutes.
  • Bread with malt and soy sauce The dough is soft, slightly sticky.
  • Stretch-fold the dough and put, covered, in a warm place for fermentation. I have 28 degrees. The total fermentation time is 120 minutes. Stretch-fold once after 60 minutes.

  • We form bread of any shape. Proof seam down on paper for one hour. We make incisions.
  • We bake in the oven on a stone, cast iron skillet or an inverted baking sheet for the first 10 minutes with steam at a temperature of 240 degrees.
  • We remove the steam, briefly air the oven, lower the temperature to 180 degrees.
  • We bake until tender. Cover the roof with foil if necessary.
  • My total baking time was 40 minutes.
  • We take out, cool, cut and enjoy.
