Ice cream with balsamic vinegar

Ingredients

sugar 200 g
water 125 ml
egg yolks 5 pieces
cream 550 ml
balsamic vinegar 2 tablespoons

Cooking method

  • Ice cream with balsamic vinegarPrepare a syrup from water and sugar, the syrup should be dense, when dripping into a glass of water, a ball should remain
Ice cream with balsamic vinegarBeat the yolks until they turn white. I had homemade eggs, the yolks were bright orange, the color in the photo of already whitened yolks. Pour in the syrup gently, stirring immediately. Add whipped cream.
Ice cream with balsamic vinegarAdd balsamic vinegar and place in a container in the cold.
  • We eat with mashed strawberries. I made strawberries without sugar.
  • Bon appetit, everyone.

Note

Ice cream has never been stirred during the freezing process. When I took it out of the freezer, the ice cream was easily scooped up with a spoon and melted quickly. It turned out very tasty.

Just what's with the cream? They are not in the description of the preparation.
Irina, thank you, I just missed the cream. We add them before the balsamic vinegar.

olgea, Olya, she cooked it It is so ... so ...
Amazing delicate taste! When I mixed in vinegar and tasted it, I fussed ... in a hurry ... in short, pour it into the ice cream maker faster, otherwise I would have eaten everything "BEFORE" Did half a portion for a sample.

There is no photo, because my "bucket" from the ice cream maker was not frozen and nothing happened with the warm mix. Poured into molds and into the freezer. The akurat was ready for dinner and ate of course

My daughter and I really liked it, but my husband didn’t. I thought, why? And ... Balsamic vinegar gave a hint of alcohol and sourness, my husband does not like alcohol in desserts and sour Sweet tastes, too, but I adore That's all So who will cook, keep in mind
Although my husband did not like it, he ate his portion quickly

I want to say about the syrup: in my opinion, you don't need to make it dense, you can have medium density or less. Dense does not mix well and lumps / threads remain like resin. I had to filter it into an ice cream maker and then soak the dishes from this sugar resin.

Beat ONLY yolks and cream with a mixer. SYRUP INSERT WITH A SPOON !!!
I burned my mixer. Well the old one did not throw out the same, I will collect one of the two.

Ira, thanks for the idea! In order not to provoke family conflicts, I will separately add myself balsamic vinegar

Mine, too, although he said - well, like nothing - but ate small.

Maybe it turned out too dense? It mixed well with me, without lumps, threads and the mixer did not deteriorate. I checked the syrup in a glass of water, as the ball remained for days, so I took it off.
Natasha, thank you for trusting the recipe.

I also checked the syrup on the ball in a glass of water.
Olya, did you pour the syrup hot into the yolks? I was afraid to boil the yolks, waited a little, and then poured in.

Olya, did you pour the syrup hot into the yolks?
Natasha, right away. My husband helped me, poured a thin stream, and I worked with a mixer.
