Basil sorbet

Ingredients

basil (green) 20 g
white wine 100 ml
sugar 40 g
lemon 0.5 pcs
egg white 2 pcs

Cooking method

  • Pour wine into a saucepan, add sugar.
  • Remove a thin layer of peel about 6-8 cm long from the lemon and add to the saucepan.
  • The mixture is brought to a boil, the heat is reduced and heated for 2-3 minutes until the sugar is completely dissolved.
  • The syrup is allowed to cool completely. The peels of the lemons are removed.
  • Squeeze lemon juice and add to syrup.
  • Further, two options are possible.
  • Option 1. Beat the whites until firm peaks and add syrup to them, put them in the refrigerator for an hour, then add the basil leaves and puree everything.
  • Option 2 (I did this). In a blender, beat the cooled syrup and basil leaves until smooth.
  • Add to the whipped egg whites and stir quickly.
  • Freeze the mass in an ice cream maker, or put in the freezer and stir 2-3 times.
  • Sorbet turns out to be soft and airy, melts quickly, but this does not prevent it from being very tasty and refreshing.
