Ingredients

cream 20% 680 ml
yolks 5 pieces
butter 50 g
dark rum or whiskey 2 tbsp. l.
light brown sugar 120 g
cinnamon 0.3 tsp
For caramelized bacon:
bacon 6 slices
light brown sugar 3 tsp

Cooking method

  • Ice cream for breakfast, lunch and dinner, for starters and hot dishes. This is the so-called gastronomic ice cream, which very delicately adds another taste to the dish.
  • Ice cream for every taste - now this phrase takes on a literal meaning. With this ice cream, you can emphasize the contrast of textures and temperatures in one dish. For example, when mustard-flavored ice cream is added to beetroot, and horseradish ice cream to dumplings.
  • And it is not at all necessary to have a newfangled PacoJet unit - an ordinary ice cream maker coped with this perfectly.
  • I invite you to make ice cream together.
  • First, prepare the bacon.

  • Put the slices on a baking sheet lined with baking paper, sprinkle with sugar and put in an oven preheated to 200 * C for 7 minutes.

  • Turn over to the other side and cook for another 7 minutes. The bacon is now caramelly and crunchy.

  • Strain the mixture through a fine sieve into cold cream and stir.
  • Add bacon crumbs, alcohol and cinnamon. Cool, then prepare ice cream in an ice cream maker or freezer.

The caramelized bacon is so delicious - I could not resist and ate some of it during the cooking process, so there was nothing to sprinkle on the ice cream ball. I recommend making more caramel bacon.

The only thing that I disagree with the author is in the quality of bacon - you need salted, and I had fresh. We already present the combination of salt and sugar in meat dishes - how delicious it will be with the right bacon!
