I did it without PF. Everything is according to the recipe. All 260 ml of water was replaced with railway. The railway did not warm up, straight from the refrigerator. Kneaded in a bread maker on the "pelmeni" mode. Molded a loaf. I put it in a roaster, oiled and sprinkled with flour. Covered with a greased film and left for 12 hours (overnight) at room temperature (about 23-24 C). Baked it in the morning. The first 15 minutes under a lid at 240 C, then the temperature was reduced to 200 C and without a lid baked for another 20 minutes until a beautiful crust.
