Nutata with onions

Ingredients

Chickpea flour 100 g
Water 300 g
Vegetable oil 30 g
Bulb onions 1 PC.
Salt pepper taste

Cooking method

  • Prepare the dough by adding water to the chickpea flour in small portions, stirring so that there are no lumps. It is more convenient to mix with a whisk.
  • Season the dough with salt, add oil, cover and proof overnight. The dough will be runny, don't be alarmed.)
  • Fry the onions in olive oil until soft.
  • Preheat the oven to 250C.
  • Grease a mold (cast iron or with a non-stick coating), with a diameter of 26-30 cm, put in a preheated oven for 5-10 minutes. The diameter of the mold should not be less than 25 cm, otherwise the dough layer will turn out thick and not baked.
  • Then put the onion into the mold, pour the dough. The height of the dough layer should not be higher than 1.5-2 cm. The thinner the layer, the crunchy the outer layer will be, while the inner will remain soft.
  • Bake until tender, when the crust is already grabbed around the circumference, and the middle remains a little swollen (about 15 minutes).
  • Serve with pepper if desired.
  • Well, what can I say ... I haven't eaten the omelet for three years, so I have already forgotten the taste.)) For me, it turned out to be an authentic omelet.))))) I ate with my husband, taking each other away, one might say. fought for every piece. I liked it very much !!!

The dish is designed for

2 servings

Lena's recipe and words 🔗

In Tuscany, it is called Cecina, in Liguria - Chickpea farinata (farinata di ceci) or Chickpea cake (torta di ceci), in Sardinia - Fainè. The differences concern only the percentage of chickpea flour and water, as well as additional ingredients. It is very easy to prepare, which is why it is still used as street food.

Omela, I'll definitely cook this! Maybe I'll just take pea flour. Nutova no. Or can chickpeas be ground? Thank you!
Omela
Marina, try to make with peas. And if it is possible to grind chickpeas into flour, then you can. I just don't know how you can grind chickpeas ??
Kara
How, how, first in a blender, then in a mill
Omela
Dry chickpeas in a blender?
marina-mm
Dry chickpeas - in a coffee grinder. I haven't tried it though. Peas are offered to grind, and chickpeas
Omela
I feel sorry for the coffee grinder. Although not much is needed here, but all the same ...

Dry chickpeas in a blender?

Well, I probably put it wrong - in a combine with knives
Omela
I don’t know ... if the instruction of the harvester allows, then of course.

shl. I started it again for tomorrow.
Gala
Also an interesting option!
Mistletoeyou are on fire today
Omela
Gal, that's not all, there is not enough time to arrange everything.
Marusya

marina-mm
Omela, then I will look forward to more recipes. In the post, somehow I want more variety.
Erhan
You can definitely grind chickpeas in a manual coffee grinder. When I bought mine, the seller advised first to grind chickpeas in it to clean the mechanism.
marina-mm
Svetlana, thanks for the information! There is a manual one.
Arka
Chalky, sister! So am I farinata doing!
Seven-year plan
Omela, now I would eat it! And nothing that night !!!
But such a picture !, that it became bad ash !!!!
And with an onion !!! .... Straight smell went !!!!

And where can I get this chick flour?
After all, I want to be impossible now !!!!!
Gala
Oh really! Mistletoe has nutata, and Nata has farinat. I will do, I will report at once in two topics.
Venera007
Unfortunately, there is no chickpea flour, for some reason I did not order it, but I ordered lentil flour. I'll probably try to bake it out of it ... Then I'll write what happens))
Omela
Arka, Natasha, please forgive me !!! Damned sclerosis, and I saw your recipe, but it was not deposited in consciousness at all.

Seven-year plan, Sveta, thank you! buy flour in Indian spices. In general, it is sold in stores of healthy and / or vegetarian food.

Tatyana, Galina, good luck girls! I will wait for impressions.
marina-mm
Omela, I report, TASTY !!! I made it from pea flour, spread the dough at night, in the morning I fried a huge onion in a pizza maker, added onion, (I didn’t regret the oil,) I poured the dough and pepper from the mill. How much I baked - I do not know, but quickly, while laying the table, it was ready. With a spatula, I divided it into sectors right in the stove and onto a plate. A quick photo. THANK YOU! Mine said to repeat!

OmelaWhat an interesting and delicious recipe, I will definitely try it!
Girls who do not have Chickpea flour, but only have Chickpeas themselves, then soak them in water and after 6 hours you can grind them with a blender to the desired consistency, and the devices will remain intact. I had experience, the recipe said "grind peas in a mortar", but I don't have a mortar. So I put it in a towel and hit it with a hammer on the cutting board! As a result, the towel turned into a sieve, the doxa cracked, and the peas remained in large pieces! On this I did not calm down and decided to grind in a coffee grinder ..., well, the thought stopped me in time, just soak and grind with a blender. And it was for me - happiness!
marina-mm
Nikitosik, but I can't grind in a blender to the state of flour, the particles are large. Falafel is fine, but dough is unlikely
We have Garnets pea flour, we liked the nutata from it.
Omela
Did it today without onions (ended), loses significantly in taste.
marina-mm
Ksyusha, about onions definitely need more. Today baked again. We loved this nutata. Only we now call it a pea omelet.

I also need to rename, for my husband cannot remember what a chickpea is. Each time he asks: what is it from ???
marina-mm
Yes, we have bad luck with the names, so as not to repeat what it is a hundred times, I give simple designations.
Omela
I will take it into service!
marina-mm
Joy
Ksyusha,, but what if instead of flour, you take mashed chickpeas, dilute with water and then follow the recipe. Will there be a completely different dish?
Omela
Marina, I never did that ... I don't even know what to say. I buy flour especially for this recipe. : girl_in_dreams: But what's stopping you from trying ???
Joy
All the same, until I cook it out of flour, there will be nothing to compare with An analogy with potatoes came to mind - potato pancakes from raw potatoes and from mashed potatoes - completely different in taste
Omela
No, well, it's clear that different dishes will turn out, but maybe it will also be tasty. It's just very convenient with flour ... I mixed it in the evening. baked for breakfast in the morning.) I really liked doing in Princess.
Elena_Kamch
Omela, and what is the point of proving at night? If you mix and bake right away, will it be worse?
Omela
ElenaDuring this time the flour seems to "swell".

I really liked doing in Princesse.
Ksyusha, you can read more for the princess. Put in cold and how many minutes to cook? Fry the onions separately? I want to cook, help.
marina-mm
Nina, I fry more onions in the princess and then pour out the dough, without unnecessary movements, quickly and tasty.

Yes, I do that too.)
marina-mm
Ksyusha, came to remind about the recipe, baked an "omelet" from pea flour at the weekend. Thank you very much.
Omela
Marina, I didn’t forget, I also do it myself.) Glad. what do you like.
marina-mm
Ksyusha, so maybe someone else will join us
Omela
Yes, yes. We are waiting for the third!

and I am so lazy that I don’t soak it overnight. I did not feel the difference.

marina-mm
Yes? I'll try to be lazy too.
Anna1957
How did I miss the chickpea? Need to try. But tell me, if you replace the water with whey? I just have nowhere to put it
marina-mm
Hurrah! The third has come!
Anna, I think that whey will not hurt, I have not tried it, but pancakes on whey work well.
Anna1957
Just wondering: why is it under the name "omelet" you have? Not a chickpea tortilla? Doesn't sound like dough?
