Milk Squash Salad by Jamie Oliver

Ingredients

Milk zucchini 500 gr.
Chilli 0.5 - 1 pc. *
Fresh mint 0.5 bundle
Juice of half a lemon
Olive oil 3-4 tbsp. l. **
Sea salt pinch
Black pepper taste

Cooking method

  • 1. Prepare the dressing:
  • Peel the chili and chop finely.
  • Tear the leaves of the mint from the stems (we don't need the stems) and chop them.
  • Mix together olive oil, lemon juice, chopped chili, mint. Season to taste with salt and pepper.
  • 2. Wash and dry small young zucchini. Cut the courgettes into thin slices lengthwise. I do this with a regular vegetable peeler.
  • Gently mix the chopped squash "petals" with the dressing.
  • Serve immediately without letting the zucchini turn sour.

  • Delicious salad. The sharpness of chili, the freshness of mint and the acidity of lemon are very successfully combined.
  • My husband in this form of zucchini can eat in kilograms for breakfast, lunch, dinner and instead of them.

Note

* Use chili peppers to your liking, based on the pungency of the particular variety.
** If the lemon dressing is highly acidic, add more olive oil to balance the flavor.

OOOOO, what a still life !!!! I've never tried raw zucchini, although I saw a similar recipe from Oliver.But I believe you even more than him - so I'll definitely try (I've already bought seeds - I love them in any form)
