Averonsky salad

Ingredients

Green beans 200-300 g
Tomatoes 2-3 pcs.
Boiled eggs 2 pcs.
Bulb onions 1 medium onion
Refueling
Vinegar 2 tbsp. spoons
Vegetable oil 5-6 st. spoons
Salt

Cooking method

  • Boil the beans in boiling salted water for 10 minutes.
  • Finely chop the onion, chop the tomatoes and eggs. Add beans and dressing and transfer carefully.
  • Dressing: mix vinegar, vegetable oil and salt.

This is what I called him "Averonsky". France has a department of Aveyron (where Roquefort comes from) and this salad is served quite often.
If you have time, beat the dressing together with 1/2 tsp. mustard, get a sauce called vinaigrette.

I actually do everything "by eye". From experience I know that olive oil is thicker than sunflower oil, therefore, on 1 part of apple cider vinegar (it is weaker than usual), put 3 parts of sunflower oil, OR 2 parts of olive. I don't pour boiling water on onions (we dress the salad with vinegar).
