Then I decided to check the t-ru inside the loaf, and there was already 80 degrees. Well, I turned it off. All this was last night and until this morning I thought that I was undercooked and would have to throw it away. But in fact, I got what Pakat calls "fresh tasty ham for breakfast". Hurrah! Here's what happened (turned upside down for some reason ...):

The ham was made in Belobok. There was exactly 1 kg of lean pork (neck and ham) - cut into pieces of about 2x2 cm. It turned out 934 g of ham. With nitrite salt - 10 g, ordinary salt 8 g, sugar 2 g, spices, water (ice) about 100 ml. Withstood the stuffed Beloboka for 48 hours.

I started to do it without reading that meta, which says how to refuel Belobok without breaking the bag. So the bag broke loose and some broth spilled out. But the ham is not dry, plump, tasty. Now I have read all 159 pages and, I hope, have grown wiser

Thanks to all members of the forum. Special thanks Pakatat and Sausageat. Their recommendations are invaluable. And to buy a ham maker and start all these things, it was the photos of the witchins that prompted me Pakata.
