In fact, a pressure cooker is not needed at all for "white-sided". Experience shows that the cooking temperature should not be kept above 80 there. Otherwise, the ham turns out to be dry.

Three years ago I also suffered with the search for a saucepan that suits me. Optimizing the height-diameter ratio for minimum volume. Found only two suitable ones. But one of them, Vitessevskaya, was discontinued. And the other was not supplied to Russia.

I ended up spitting on this search and making the pot myself. I have been using it for the third year, everything is fine. Diameter 155 mm, height 210.
And the broth in such a saucepan after boiling the ham is also very fatty. There are two liters of it, or a little less.
