First of all, finely chop the pineapples (250 g). I took it from a can, you can also fresh. I would not recommend replacing them with something else, at least for the first time it is better to cook this way.
Next, in a large bowl, combine flour (390 g), sugar (400 g), soda (1 tsp) and cinnamon (1 tsp). You can also add nutmeg (also a spoon). It seems like there is a lot of sugar, but the cake will not be sweet in the end. If you are really afraid, reduce its amount to 300.
Then we take a second bowl and knead a large banana (or two small ones) in it. I already wrote in the recipe for chocolate muffins that I take firm bananas, and not overripe, as is often advised in recipes. It tastes better for me. Knead with a fork or potato grinder in mashed potatoes.
Fall asleep pineapples, along with the juice (which was formed when cutting). You can add finely chopped nuts (100 gr, pecans or walnuts).
Then there are three eggs.
Vegetable oil (180 gr). For some reason, many are confused and think that vegetable = sunflower. This is certainly not the case. You can also take corn, olive, grape seeds, and so on. Anything you like more, but preferably without a strong smell and taste. The vegetable oil in baked goods gives the cakes moisture and softness. This ingredient in the recipe is important and the amount is also critical. Followed by a teaspoon of vanilla extract. If there is no extract, do not add anything.
Stir the liquid ingredients a little and add the dry ingredients to the cup.
Mix the mixture well. I was too lazy to get the mixer and did it with a spatula. There were no difficulties, the main thing is to do it diligently. Then pour the dough into a mold with a French shirt. I have 16 cm and I made as many as 4 cakes, each time I poured about 360-370 grams of dough. You can make 3 cakes of 20 cm, for example.
We bake the dough in an oven preheated to 180 degrees (top-bottom mode) for 25-30 minutes. But check with a skewer. My top was decently browned before the cake was ready. The smell will be crazy in the kitchen. All the same, baking with bananas is something.
