Pfalz potatoes in wine (Pfalz Kartoffeln in Wein)

Ingredients

potatoes 1 kg
bulb onions 2 pcs.
butter 3 tbsp. spoons
dry white wine 200 ml.
vegetable broth (you can and without it) 200 ml
salt, pepper, caraway seeds, bay leaf taste
parsley greens taste

Cooking method

  • This very simple but delicious recipe was found by me once again in the book "Delicious Potato Dishes". I walked past him for a long time, but somehow it didn't work out. And then the stars converged and voila:
  • Peel and cut the potatoes into rings. Dry well with a towel.

  • Peel and chop the onion as small as possible. Heat oil in a frying pan or saucepan and simmer onion until transparent.

  • Place the potatoes with the onions and fry until the onions are browned and the potatoes are golden brown. The recipe says the potatoes should crunch at this stage, but this seems unlikely to me. Either the onions will burn or the potatoes will not be fried. Therefore, we are looking for a middle ground.

  • Add wine, broth, spices to the pan. Close the lid and simmer for about 15 minutes. Open the lid and let the liquid evaporate.
  • Sprinkle with parsley before serving.

Note

This potato can be an independent dish and a side dish. Wine is felt most strongly in onions, potatoes are rather crumbly (although this depends more on the variety). Thanks to wine and onions, the dish is not bland. We liked!
