As a result ... In the Quartet (9 cups) there was a lot of one portion of dough. In Lilia (10 cups) - the dough is still too much, it rose by 3-5 cm during proofing and baking. But in principle, it is normal. I posted a photo. There you can see that the dough has risen all the same over the "heel" of the shape.

How to put one and a half portions of dough in the Castle (it also has a volume of 10 cups) - I can't imagine, to be honest ...
