I also like cooking turkey drumsticks. I take 2 - 3 shins (depending on the size), boneless. Skinning. Mine, rub with salt and ground pepper. In a slow cooker, Stew mode for 2 hours. If there is only one shin and only for warm use, then I do nothing else. Came in 2 or more hours, took it out and everything is ready. If the legs are 2-3, then I also cook jellied meat. Then after an hour I throw in raw peeled onions and carrots, as well as a bay leaf and cook until the end of the program. Then part of the meat is consumed hot, and part, after cooling, for jellied meat. In the lower leg that for hot use, I gently and easily take out the tendons, preserving its integrity. Well, or from three shins I choose the most intact large pieces. And then, as you want, you can cut into cubes or thinly into a sandwich.
From that (from those) legs that for the jellied meat I take out the tendons, wrinkle the meat with my hands and fill it with the liquid that remains in the bowl. I adjust the proportions of the meat to the amount of liquid.
It turns out very conveniently, having bought fresh meat, they do not need to occupy the freezer, freeze it. And two dishes are prepared in 2 hours. And not for one day. Warm meat for today (you can put the rest in the refrigerator) and jellied meat for tomorrow or the day after tomorrow. Aspic is tasty and dietary, not fatty.

I never regretted that I bought it. By the way, I cook cottage cheese on heating. I fill in milk and buttermilk in half and leave it overnight.
