Ingredients

White dough:
wheat flour 50 g
water 50 g
dry baking yeast 1.75 g (1/2 h. L.)
Dough:
all dough 100 g
Rye flour 120 g
Wheat flour 310 g
powdered milk 20 g (2 tbsp. L.)
sugar 1 tbsp. l.
salt 1.5 tsp.
wheat bran 2 tbsp. l.
water 265 g
maltose rye molasses 1 tbsp. l
olive oil 1 tbsp. l.
dry baking yeast 3.50g (1h. L.)

Cooking method

  • We put the ingredients in the bread maker according to your instructions and bake. I have a MOULINEX OW613E32 bread maker program 10 (whole grain bread) weight 750 g time 3 hours 06 minutes.
  • Knead the dough and refrigerate overnight. (Dough for both the oven and the bread machine.)
  • Cooking in the oven.
  • Sift the flour and add all the dry ingredients and mix, add the dough and water in which the molasses was dissolved (it mixes better this way). Knead the dough, it turns out sticky, then add a tablespoon of olive oil (any vegetable oil can be used). After adding the oil, knead the dough well for about 30 minutes, it almost ceases to stick to the hand, the dough is very elastic and soft. We form a bun, cover with foil and set for 50-60 minutes in a warm place.

  • After the dough rises three times, we knead it (I lightly grease my hands with oil), shape and set for detuning for another 40-50 minutes,

  • sprinkle the raised bread in the form with a little water and put in a preheated oven at 220-250 degrees, the first 15 minutes with steam (I pour hot water into the pan), bake for 40 minutes until tender. We take out the finished bread from the mold, sprinkle the crust with water and cover with a towel, milk to cool on the wire rack.

I took the recipe from the recipes from the MOULINEX OW613E32 bread maker, it is called that, only I altered it a little to my taste. Added molasses and bran. The bread turns out to be very aromatic and tasty, I bake it for almost a year, every day. It is not sticky and without sourness, very fragrant can be seen from the molasses, such a simple gray bread, my home people really like it. Only here in a bread maker the crust turns out to be a little thicker, and in the oven it is very thin. For example, my son likes it better when he bakes in a bread maker, and mom and husband in the oven. Here's a universal recipe. Today I set the time on purpose, as it took three hours to prepare in the bread maker.
I would be glad if the recipe comes in handy. I have a baking dish 30/15/7 cm berhoff.

The L7 form fits perfectly into the Panasonic bread maker. You have moulinex, I don't know what size it has.
I also bought my uniform at the Bread House store on the Komarovsky market. These forms are of very good quality. It is wonderful to bake bread in it and in the oven.
I really want to buy myself more forms L11 in order to bake small loaves at a time, both white and rye at once.
