Flour (Sokolnicheskaya special) 100 g
Whole grain flour (wheat wallpaper of coarse grinding Belovodye) 100 g
Eggs 2 pcs.
Baking powder 1 tsp

Cooking method

  • I found the idea of ​​a sourdough waffle dough and proportions - from the Ayn recipe - in the internet. Instead of wheat, I used lactic acid herculean sourdough from Admin. I replaced the butter with almond butter. Replaced some of the flour with whole grain. The result is the following recipe.
  • In the evening:
  • In a large deep bowl, I mixed warmed milk and almond butter (warm, not hot) with herculean sourdough, sifted flour and salt. Tightened with plastic and left at room temperature until morning.
  • In the morning:
  • Separated and separately knocked down the proteins with baking powder, yolks with a pinch of fructose. I added yolks to the dough (it doubled in volume), then carefully the whites.
  • She baked in a 3-in-1 Philips sandwich maker, purchased yesterday on a tip from bakers.
  • Herculean fermented waffles
  • Family comment: I liked it more than the crunchy creamy waffles without yeast and sourdough from the instructions for the sandwich maker. Hercules sold out completely.
  • Waffles are slightly sweet - can be served as dessert - for example, with whipped cream and fresh strawberries, or as snack - instead of toast or bread for sandwiches, for example, with caviar or smoked salmon.
