It's like with mint and lemon balm - while I twist them in a meat grinder, the granules are slightly oxidized by oxygen, some biochemical processes take place, changing the taste and aroma.

I did it in a "lazy" way through freezing. When cutting and kneading, the leaves "snotty" slightly, so it seems to me that they should be granulated well in a meat grinder.
Immediately after cutting, there was no smell - grass with sourness. After 4 hours of fermentation, the husband smelled almond notes, and after 7 hours some kind of fruity almond smell, slightly reminiscent of Amaretto liqueur.
In general, the idea with the turn turned out to be very successful, whoever has access - I highly recommend it!
