Fermented tea made from leaves of garden and wild plants (master class) (page 383)

Yuri K
Luna NordWell then, okay, the first delight will pass, understanding will come, then I will slow down. This is temporary, while it is new - it is interesting to do and shoot, write about it
Luna Nord
Yuri K, Yuri, that's so great! We will read it with pleasure and see, otherwise we ourselves are not the same))))))
Yuri K
Luna Nord, Thank you!

Well, now the last stages of the birth of tea have gone! Today I was in no hurry, defrosting, letting it stand, twisting BEFORE and AFTER fermentation, which by the way lasted about 7 hours.
Fermented tea made from leaves of garden and wild plants (master class)
And when drying, I clearly felt the smell of prunes, a strong compote smell! Even the children came running, they say - it smells not at all like the first time, it smells delicious!

But on the granules, here again not everything is smooth. Even twisting after fermentation, there was no strong molding at the exit, the raw materials came out loosely from under the grate .... Well, okay, the main thing is to get the taste and color of the tea!
The son helped to weigh, a total of 500g of ready-made tea came out

Yuri K, the beauty! Congratulations on another tea! While I put the apple trees in the freezer, I'll be busy for a few days, and then I'll do it.
Yuri K
al_usya, Thank you! While one leaf is ready, the second is still moist. The charm of the smell of prunes is gone after drying, but it's okay! Dry pre-fermentation and aging in cans will fix everything!
The next step is pure cherry, the leaves are still in the freezer, I will probably do it tomorrow!
I look forward to your delight in my apple tea!

I look forward to your delight in my apple tea!
Oh, I'm looking forward to it myself! At first, my husband was somewhat skeptical about my new hobby, but after trying that apple he said that yes! So we will learn and gain experience. I even allowed myself to open a topic on the site, where I mainly communicate (here you can not give links, I will only say the name of the site - Say7) in order to develop this direction and study together, and it turned out that a lot of interested people, many also studied in See this topic for information. I gave all the links there, as expected, no plagiarism Purely for the sake of "art to the masses"
So maybe someone else will come here, although from experience I know how many people purely from the "bushes" observe and try something there themselves. For me, it is always more fun in the company and information is then assimilated better.
And you can
Yuri K
al_usyaGreat, let them pull up, it's generally interesting here!

To paraphrase the famous cartoon character, "Why was I so angry? Because my census did not bloom! Now I will become kinder!"
Here is my future tea blooming! With currants in my area for many years now, trouble, either freezes out, or the sun is so aggressive, over the past three or four years, everyone in the district has lost huge lush bushes of black and even red currants, sadness ... But I will write expanses!

... But census expanse!

If in the photo this is a census (we call it decorative currant), then you can try to dry the flowers in tea. They taste like honey. Only at 30-35g. not higher.
Yuri K
lily_a, this is a census, the smell is such that the head is spinning! I personally planted the branches dug out in the planting seven years ago. The berries are awesome too, the cinnamon jam is one of my favorites

The question arose sharply. If everything seems to be clear with the main process itself, up to drying the tea in the oven, then how long to keep the tea for pre-fermentation in a cloth bag is not clear. Right now the apartment is cold, and the humidity is high, there is no heating. He can not, instead of drying, on the contrary, absorb moisture but from the air?

The final chord, ready-made, beautiful, fragrant, in such a box to keep!

al_usya
Yura! Very beautiful! Congratulations!
I understood that we were drying it in a cloth bag after the oven, I kept it until it, when shaken, begins to emit such a sonorous rustling sound, and pre-fermentation, as I understood it, is already ripening in a container, aging.
Yuri K
al_usya, absolutely right! Above, I put it a little differently on the question of final drying. It’s damp here, it’s not clear how long it was to keep it and whether it absorbs more moisture from the air, that is, the reverse process is probably possible ... I didn’t risk it, it seemed to rustle, we’ll look there))) There is no jar, but I will open ! The smell is very interesting, it seems to smell like black tea, and a little cherry, and there is a pear aroma)))

I have now assigned her another purpose, tea! During the whole season it climbs, so during the season I will have young foliage!
Aha! herself, as she began to make tea from garden sauces, so raspberry shoots do not torment, but pleases, and cherry ...
By the way, cherries in mono form give a slightly colored tea. At least that's the case for me. Well, and ... in a whisper - to me she stinkssmells strong. I add no more than 10% by weight to mixes. And more often I do mono and distribute it as an appendage to other teas. This is how you can diversify your tea collection.
Yuri, is the sucker growing with you?
Luna Nord
But I've tried to make tea from a sucker, I didn't like it. It is a pity that this year I will not make teas from rasyukh and ivanushka .... my husband has a strong smell, his head starts to ache.
Radushka
Luna Nord, I didn't like it either! I made from sucker and cherry in half. There was a strong smell of blooming sucker. Then I got some more unpalatable tea made from garden hedgehogs-raspberries. I mixed everything together, added raspberries, packed it into a jar and forgot ... A YEAR has passed! I had to make a presentation, well, I decided to take a little of this mixture. What if someone will like it? I opened the can, and the tea ... smells like HONEY! And no smell of sucker remained in it. The taste is also very decent! So, I'll do it! (if ever I get to a sucker. It's cold here. And rain)

Yuri, is the sucker growing with you?
And I didn’t know before your question what kind of plant it was! In childhood, we called him dates))) There are such bushes, but mostly as decorative, it grows in the city, and the city is exhaust gases and so on, unfortunately ... I just probably did not pay attention to nature, maybe it grows somewhere!

Perhaps a goof as a filler for volume will go if I find it outside the city! For a cherry mix, it will be touched)) Cherry seems to interrupt any aroma))
Radushka
Yuri K, we have it growing EVERYWHERE! near ponds and oxbows. Self-sowing, as I understand it ... The berries are edible. Birds carry
Yuri K
It will also need to be made of irgi, we plant forest plantations with it, we have a lot of it!
Radushka
Yuri K, did. I'm ... somehow indifferent. I thought it would be tastier. Now I only use it in mixes. I spent my first season making mono teas. I wanted to understand my own preferences
Yuri K
Radushka, I think mono teas have little aroma and are laborious to collect. But the mixes are profitable, the mass is enough to make a batch))) I think the next tea I will have irga + cherry, as the most numerous in my area))
Radushka
Quote: Yuri K
I think mono teas have little aroma
Well, depending on what they are made of. Raspberries, pears, black currants are very aromatic. As it turned out recently, forest blackberries are also fragrant! They say that strawberries are very fragrant. But, there are such small leaves that I ... was too lazy to collect
And, here, garden strawberries (called strawberries), it seems to me very similar to ordinary "black" tea. Astringent. Beautiful colour. And, here, I did not notice a specific aroma-taste. Maybe it depends on the variety

Thanks for the information, what I need! I seem to have noticed this feature giving rich color and astringency. I did the previous very first batch when, there was a very beautiful color when brewing. And this large batch (the second in a row only) - I get a heavy color, only having married a couple of times when brewing)) But here I did not add the foliage of garden strawberries, it is difficult to collect it, strives to come off with petioles))

And I did it from irgi, too, not very much. It is difficult to find an edible scent growing in our area so that I do not make tea from it. Always different. None of the lindens (well, Lyudochka warned) from the apple tree always comes out different, probably depends on the variety. From barberry with an admixture of grapes cool, from hawthorn in the mix is not bad. And my favorite is "white-pink" from Ivanushka.

We have a problem with fireweed, that's why I look at all sorts of garden scent
I looked at Irga specifically in the search, read good reviews, did not meet about the indistinct taste / aroma ...

Yuri, what if you try to land? you can use bushes or seeds. I noticed: Ivanushka loves fumes, it multiplies very well and quickly there, well, so that the earth is good with sand. And then, if that))))) I will send it by parcel.
Yuri K
Luna NordI don't even know what to say, our soil is loamy, but the heat in summer is under and over 40! They write that he prefers a milder climate. Was it possible to breed with seeds? I read that rhizomes mainly propagate it
O_lush_ka
We add irgu to mixes to fill and soften the taste of highly aromatic herbs, such as cherries, blackberries. In the first year of teaching teas, mono tea was made from irgi and also did not immediately make an impression at all. As a result, the verdict was passed - in a compost pit, but they safely forgot about it. A year later, we stumbled upon a container of tea and decided to try it again. We were pleasantly surprised. The tea acquired a slightly tart and rich, pleasant taste and beautiful color. They forgot to take a picture, the tea ran out quickly. Leaves were collected in the fall, mostly red-orange, with the addition of green. So we will continue to use irgu.
Luna Nord
Quote: Yuri K
And did you manage to dilute with seeds?
And I do not know)))) I propose options!
Yuri K
Luna Nord, well, you can probably try! There will be an opportunity, remember me, do not bother on purpose I will try to make a plot in planting, so that it is not in the open steppe sun
Radushka
Yuri K, is geranium growing? Meadow, or even garden. I, however, turned out to be such that it tastes bitter. But, it turns out, you need to brew it much weaker than garden scent. And the color ... BOMB! Even the boots are painted! This season I am going to make mixes using geranium in small quantities.
Yuri K
Radushka, nope, there is no such fragrance, only room ones But I can't stand it, in the next room it grows
Radushka
Yuri, our fireweed does not grow, practically. Rather, where it grows nearby, now it is completely inaccessible. You won't go to the Carpathians for him ... One girl from near Chernigov sent me in a parcel. But, you can buy in gardening stores, and in online stores. And even in the market where seedlings are sold. I saw some decent bushes in a pot the other day. Well, of course, you need to prepare special soil. And he grows with us shorter in height

Quote: Yuri K
I can't stand her
I see
Yuri K
Radushka, Are you talking about cypress? He is considered almost a weed, is it really sold as seedlings ??? Wonderful, it is unlikely that they sell like that, I will see, I will be surprised, honestly
Radushka
Yuri K, not seedlings. I saw in pots for indoor flowers. And they sell rhizomes. In gardening stores and online stores. I don't know the quality.
Luna Nord
Yuri K, Address me your in a personal please "poklunite".Maybe I can do something. And a phone just in case!)))

I only do it the second time, but I also noticed that the apple tree is different and the aroma is completely different. And yet, it turned out that I cut this batch of apple trees with a knife, repaired the meat grinder, but it was a pity not to break again. I crumpled it with my hands, it seemed to be damp, but not very of course, it is cold at home, fermentation practically did not go, in the morning I decided to scroll. Now it seems that things have gone, but still somehow not the same as with the first batch, and even more so not as I imagined: pardon: I go, I smell to understand by smell, but so far I don't really understand, to be honest

Alla, what do you want to smell? And fermentation is one hundred percent, Lyudochka writes about it, on the contrary, if very good. hot is not very good, and at a little over 20 degrees, high-quality fermentation begins. It seems so, well, if not, our devuli will correct.
Yuri K
Luna Nord, now, absent, sorry)))

I thought it would be clearer the second time, but not yet ...
Linadoc
Boy and girls, new arrivals! I understand that it is very difficult to read almost a thousand pages, so, for my part, I will give several links to the pages, read them and the following ones.
Just read here, here, here, here, here... This is for a moment.
Well, the first pages with all the footnotes and links are required for careful study. There are answers to almost all the questions you raised on the last pages.
Maybe someone else will throw you links to facilitate your work, taking into account the experience gained.
Yuri K

to facilitate your work, taking into account the accumulated experience.
We read, but the topics are immense, everyone's experience is different. The good news is that the process itself has become recognizable! Something turns out, something not quite, but the output is still awesome tea!
al_usya
Linadoc, thanks a lot for the links!
Made tea! Very happy! Such a pleasant aroma of cherry jam, only subtler. Coming from tea during drying, kept in dried and brewed today, the taste and aroma are divine! Cherries about a quarter of the apple tree
Well, a photo

al_usya, Alla, congratulations on such a beautiful tea! May the whole family be happy! Have a nice tea!
al_usya
Radushka, This is the Poltava region, now we have been renamed to Horishny Plavni.
Near Kremenchug.
francevna, Alla, thank you: rose: It is important for me that my husband is also impressed and he likes it, yesterday the place enjoyed the smell during drying and stated that it smells delicious! I feel that the cherry will become our favorite.

al_usya, congratulations once again! But why did it remain almost green? I get black straight granules

I, too, am surprised at this, yet I think not everything is right with fermentation. It gets darker definitely, but not black.
Nadyushich
al_usya, Alla, congratulations on a successful tea! Apple and cherry is one of my favorite teas. Over time, it will become even more fragrant.
Quote: Yuri K

The cherry is black in color, but the apple tree is red and the granules are looser. But the apple tree gives a gorgeous color!
al_usya
Nadyushich, Thank you! I really hope to learn and make a lot of teas! Many and different!

came running with a report on the birch! I read earlier on the internet that they also do it, but without the details of technology and taste.
Since my husband and I have been tempted since January, we want to make TEA, we decided to try birch while waiting for Ivanushka.
Technology - as taught by the "classics", without deviations. Collected 2 times - just leaflets and sticky notes. It turned out better from the sticky ones. Withered overnight, "the lump stuck together", 2 r in a large meat grinder, the granules are dense, did not crumble.Fermentation for 8 hours in a room without blankets.
And then the husband dried with a fry. Just at that time I returned home and in the hallway I was knocked off my feet by the delicious strong sweet and sour smell of berries, as if jam was being made. All evening I remembered what it smells like .... I remembered!
That's when black. currants, mashed with sugar + a little raspberry, diluted with boiling water in a cup, then this fruit drink gives off such a smell !!!
The granules turned out to be black, can. Brewed, of course, immediately. The taste is VERY !, never in your life you will say that birch. I was worried that brooms would smell like a bath. No! and the aftertaste is honey.
I understand, girls, that this sounds incredible: currants, raspberries, honey, jam - in relation to birch !!!
But try to do it just for the sake of the smell when drying. It is fantastic!

they also plucked all the fruit leaves that they found in the garden - I was eager to try the Village, because such reviews are about him!
it turned out a pound of greens: apple, pear, raspberry, black. currants, sea buckthorn, chokeberry, cherry (no more than 5-7%). They also made it using technology, only without freezing - the leaves are soft and tender. It turned out well, but for me - a very weak taste, so watery. I understand that it is still VERY early and should be harvested after fruiting. But in general, the bouquet is very rich, the color is dark, darker than birch. But birch is much richer in taste. Yes, cherry also stands out against the background of everyone in both smell and taste.
