Olya, good day. The dough for Easter cakes is very rich, so it does not rise as quickly as plain bread. I think that yours, judging by the speed that you describe, needs another 15-20 minutes. Has it gone up 2/3 of the form? If so, preheat the oven. Just 20 minutes later and set to bake.

Olya, in a multicooker it is more convenient to bake in a mold. Or increase the amount of dough so that it can fill the entire bowl. Do not get it right away - you need to cool it a little. Then put the mold / bowl on the barrel and gently turn the cake over onto your hand. I am sure that the second cake will be perfect!
