Basic recipe: 500 g flour; 1 teaspoon with top salt; 5 eggs; OK. 1/8 l of water.

1. Stir the flour and salt. Add eggs and water. Stir everything vigorously with a spoon until the dough starts to bubble. Proof the dough in a sealed container.

2. In a large saucepan, bring a large amount of salted water to a boil.

3. Moisten the board with the handle. Spread one spoonful of dough with a thin layer on a board and scrape the dough with strips about 4 mm wide with a long wide knife or spatula into boiling water. Tip: It's even easier to do this with a dumpling press.

4. Reduce heat. After 1-2 minutes, the dumplings should rise to the surface. Transfer the dumplings with a slotted spoon to a decorative dish and keep warm in an oven heated to 80 °.

5. In this way, cook all the dumplings.

6. Sprinkle the finished dumplings with cheese, onion circles fried in butter and chopped green onions, then immediately serve the dumplings.

7. For the green dumplings, sort out 150 g fresh leafy spinach, wash and remove the tough stems. Blanch the spinach leaves in salted water for 30 seconds, then dry well. Finely puree the spinach with a mixer and stir into the dumpling dough. Next, cook as described above.

8. For the red dumplings, add 2 tablespoons of tomato paste and a pinch of mildly sweet ground paprika to the dough, then cook as described above.

9. Grease a refractory dish with butter, lay dumplings and cheese in layers. The dumplings should be the last layer.

10. Cover the mold with a piece of aluminum foil and bake the dumplings in an oven preheated to 200 °. The cheese will melt in about 10 minutes.

11. At this time, peel the onions, cut into rings and fry in butter until golden yellow. Wash green onions and chop finely.

12. Sprinkle the prepared cheese dumplings with onion and green onion rings and serve immediately.
