Pumpkin Sour Cream Quick Bread

Ingredients

Butter 100 g
Sour cream* 1 tbsp.
Eggs 3 pcs.
Sugar 1 tbsp.
Pumpkin puree 1 tbsp.
Vanillin on the tip of a knife
Baking powder 2 tsp
Salt 1 tsp
Flour 2.5-3 tbsp.
Cinnamon 0.5-1 tsp
Glass 250 ml

Cooking method

  • Melt the butter and cool to room temperature. Combine the sifted flour, salt, cinnamon, vanillin and baking powder. In a separate bowl, beat eggs with sugar, add butter, sour cream and pumpkin puree, mix well with a mixer. Add flour mixture in 2-3 passes, mix well. The dough should be thick. Grease the mold (I have 25x25), pour out the dough, smooth it out. Place in a preheated oven. Bake at 180 gr. 50-60 minutes, until a dry match.

My cupcake turned out to be light, because the pumpkin puree was made from raw pumpkin. Baked pumpkin makes muffin much darker
