  • My husband has a joint "disease" - China. Sometimes trips to this amazing country happen. Last year I was lucky enough to visit Shanghai ... An amazing, diverse, wonderful city! There was a so-called "food street" next to our hotel. A lane in which on both sides a bunch of small cafes, dumplings, working from the very early morning. The Chinese, rushing to work in the morning, have breakfast in such cafes. Well, we also went there for breakfasts ... On the second day, the owner of the institution recognizes you from afar, greets you as a family, and most importantly, from the first time he remembers your preferences (steamed dumplings or in broth with or without pepper, etc.).
  • And also in our family there is a tradition in winter to often make dumplings….
  • And so my husband, looking through the photographs from his trips with longing, decided to combine our tradition with his love for Chinese dishes.
  • So:
  • Pour sifted flour into a bowl. Make a depression and pour in cold water, knead a hard dough. Set it aside for 30 minutes.
  • Prepare the filling: mince the pork pulp. Mix chopped meat with 1 tbsp. l soy sauce, vegetable oil, finely chopped cabbage and green onions, ginger and salt.
  • Roll the dough into an even thickness "sausage" with a diameter of 2 cm

The main "trick" of this recipe is to make dough mugs by hand, as in Chinese dumplings. Of course, they do it super quickly, only their hands flicker, but we cook to enjoy not only the taste, but also the cooking process! And it's not that long and difficult ...
And to taste it is almost the very "IT"! I just didn't have enough cilantro in the broth, but maybe seasonings with sodium glutamate. ...
So they remembered China, and talked to my husband. and the child has a lot of pleasure from the process, and pleased their stomachs ...

Diana And the smaller the cabbage, the better, the minced meat will be more homogeneous there will be no large pieces. But I would not grind it in a meat grinder ... The juicier the cabbage, the tastier it will be. Next time we'll try to make it with Peking.
And by the way of cooking .. and so and so delicious. Only a couple of pieces broke in the saucepan, and then from greed, the minced meat needs to be pushed less! For a couple, I made 15 minutes the "Steam cooking" mode of the Panasonic Multicooker.
