Spinach dough (recipe + kneading in a combine + dough sheeter) video

Ingredients

Finely chopped spinach (frozen) 100 g (4 tablets)
Egg C0 2 pcs
Salt 1/2 tsp
Vegetable oil 1-2 tbsp. spoons
Flour 3 glasses with a slide (500 gr)

Cooking method

  • I pour 4 tablets of finely chopped frozen spinach with boiling water for 5-10 minutes, drain the water, rub through a sieve (rubbing through a sieve removes fibers from spinach that interfere with cutting noodles), add two eggs, salt, oil, mix and pour into a glass (250ml ). A glass is needed solely to maintain the proportions - the talkers should be slightly less than a full glass, if you squeeze the spinach hard, you get less liquid, you can add it using the strained water from defrosting the spinach, if you get more liquid, you need to add a little flour.
  • I put three heaped glasses of flour into the bowl. I turn on the harvester at the first low speed (there are only two of them in my Phillips), pour a talker into the flour, wait for the harvester to chop the dough into uniform crumbs (the exact "cutting" time is 30 seconds!), Pour it on the table, collect it in a lump, put it in a bag and in the refrigerator for an hour, maybe 15-20 minutes.
  • I roll out the dough in a dough sheeter (I have 6 levels of rolling, I start with the 6th, then the 4th, the last 2nd), since the dough turns out to be quite dense, I do not dry the sheets before cutting. I roll out one portion, immediately cut it into wide noodles and hang it up to dry. After drying, I put it in a linen bag. The noodles are stored very well, there is an experience of cooking noodles that have lain for more than a month - no problem!

The dish is designed for

700 grams of dough

Time for preparing:

5 minutes

Cooking program:

Chopping with knives in a combine

Note

Each mistress is free to use this method based on the power and characteristics of her unit!
My Philips HR 7762 (750W, 2L bowl) makes it easy and effortless!
For my own peace of mind, I propose to make such a volume of dough, which is equal to the maximum weight of meat allowed for your combine.
I tried very different spinach, now I buy only Auchan's - Every Day.
If you want a more uniform color without specks, grind the spinach puree in a blender.
Yes, while you are rolling out one layer, a large lump of dough, nevertheless, it is better to put it in a bag, otherwise it will dry out ...

What a cool video! The same is impossible! Now if you want or not, run to the Metro for a noodle maker! Well, how to live now? Actually, this site turned me into Cinderella in the kitchen. Previously, on weekends, I only baked, but now not a day without a new dish. Thank you very much for such a master class!

Hilarious video! It even seems so simple on accelerated viewing. I looked at the noodle cutter. I've been looking at her for a long time. After such a video, it's time to decide to buy. I'm afraid my family will not understand. They will say: "Mother has completely lost her mind, not only does she cook, fry, bake, dry all the time, but now she wants to put noodles with pasta on stream."

Is it possible in more detail? If it is impossible in this thread, can you answer in a personal?

Doxy, the noodles are gorgeous! Question one: 100 g of spinach - is it with ice, or is it already thawed? While in Auchan there is one like yours, but spinach comes in different packaging, and there may be different amounts of ice.

Yes Yes... . And I invite Russians! Now we are assembling a joint venture for Italian ATLAS 150 cars with a motor directly from the manufacturer. The cost is about 90 euros. And also nozzles, dryers and other Markatov gizmos. Taking into account delivery to Russia, it will still be cheaper than anywhere else))
Come on in!

Irina, thank you! 100 grams of spinach - 4 frozen tablets (one frozen tablet weighs 25 grams), I don’t know how much water flows down during dry thawing. Take 100 grams of frozen food without draining the melted water, if there are a lot of crystals, pour boiling water in a sieve and wipe it, but you may need to add a little water, look by volume.

Thank you! Now is the time to take the dough roll - the season of cherry dumplings! Believe me, without accelerated viewing, it is not at all more difficult - the speed is increased only TWO times, so instead of 2 minutes, it takes 4-5, though without taking into account the "rest" time of the test, installation of the machine and dryer ...

At the expense of the dough sheeter, I can only warn you about one thing - the pasta made on it will not replace Barillo's or Deckeck's pasta. Everything that I do goes only into broths, and, of course, dumplings, dumplings, pasties, brushwood. For a side dish, it's still better to use native Italian pasta made from Italian flour ... This is my opinion and the opinion of my family!

I disagree. I make noodles that go well as a side dish, and it seems to me tastier than any purchased, even, sorry, Italian. Even - bought there, at the place of manufacture, in stores. In Italian cafes - yes, it may be tastier there, but I suspect that they make all sorts of lasagna-canneloni-fettuccine themselves.
And I do it from our native "Sokolnicheskaya" flour, only sometimes adding a third of Italian flour, from hard varieties. As some books about Italian food say, once upon a time, when we actively exported our wheat all over the world, and the Italians did not grow it on an industrial scale, the pasta was made from ours. It was cheaper for the Genoese to buy from us than to grow their own.
If the noodle cutter has several attachments for different types of pasta, then, in my opinion, it is quite enough for household needs.
Of course, if you want a specific shape, you can buy it. To make sure once again that homemade noodles, spaghetti, pici, gnocchi, etc. - tastier

Irina, I dare not argue - everyone has their own taste preferences!
Ikra
Then I wonder why your noodles do not suit you, as a side dish? In my opinion, this one, spinach, is what the doctor ordered. Make a delicious sauce for it, for example, creamy, with red fish, or with mushrooms - and it will be good even as an independent dish.

Let me disagree with you!
I also came to believe that Italians cook their pasta only from Durum flour, until I stumbled upon the Kuhny TV channel and watched the "Villa of Pasta" program cycle, where an Italian pro makes exemplary pasta of various types and from various flours, including very there are many recipes only from 0000 flour, that is, very refined white flour. And the pasta, I'll tell you - you can choke on saliva from the variety of flour and options!
Look here, I advise everyone "Villa pasta", dough recipes, secrets, tips, videos, from Donato de Santos https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=278551.0

And the main thing turned out to be not from what flour you make, but how you make dough!

My family and I do not like homemade noodles in the side dish, I see no reason to raise disputes on this topic ...
I want to remind you that everyone has the right to their own opinion, you have expressed yours, I have mine. Do I need to convince anyone of anything?

Doxy, cool video and good recipe! She looked at how quickly to rub spinach on the Passaverdur rub and wanted her even more. But while I was thinking whether I really needed it, it disappeared in the German Pasta store.
I'm spinach on a blender on a blender, and it seemed to me maybe, but my noodles are more uniform in color.
And I agree with Irina Ikra- homemade noodles from the dough sheeter are a very great side dish! Even if I don't make the sauce, but just sprinkle it with Parmesan ... my husband doesn't really like Italian store noodles, and he is ready to eat my homemade noodles even every day!
Doxy
Nelya, what can you do, we are all different. I would be very glad if you make a paste according to my recipe and please my husband, for the sake of them we are trying!)))

I don't grind the spinach in the dust on purpose, I like the mottling more.

Wipe, yes, a cool thing, I can't say that I often use it, but during the harvest period it works for all service stations! I think because of the closeness of autumn they disappeared everywhere, in Prague Teskomov's food meals are also over - there is a shortage!

This unit also interested me very much, given the presence of a large orchard. I found out that Teskomovsky sieves can be purchased in an online store, their diameter is 20 cm, and the cost is about 1800 rubles. There is a similar unit with a diameter of 24 cm and costs 1400 rubles in the online store for the pros. I ordered such a wipe for myself. They will bring it today. They also have Passaverdura on their website, but it was not available and when it will be is unknown.

Natasha, I have seen a lot of these devices for cleaning and we have a lot in household stores, and they catch my eye when they are no longer needed. You can look in an Internet store, for example, in ozone, so what can you spend money on shipment like that?
And if there is a small amount of spinach, then it can be perfectly rubbed through a regular sieve, with an ordinary pestle, a crush or a spoon - I do this sometimes
lungwort
: hi: Tatiana-Admin, I have never seen metal hand sieves for cleaning before. Previously, I only had this in the Ovazio combine. But the harvester could not stand the harvest volume from my garden. Today I ordered and today I have already received a sieve Emanuel 3. I am very satisfied. And the size is just for me, and there is no need to go beyond 3 seas.

Tatyana, thanks for the congratulations, but there will be no noodles yet, we still need to buy a noodle cutter (although the noodles turn out to be cool with handles, no one has kneaded dough for noodles better than my grandmother, but better than my grandfather they did not cut).

Electric "wiping" sieves are great, but today I have already purchased a mechanical one and am very happy. I think that only a professional installation can handle the harvest in my village. But this is overkill for me. And so it is safe and always possible to stop on time.

I do not squeeze the spinach, but grind it in a blender in mashed potatoes and add to the dough. I do this on purpose, since spinach is not usually eaten at home.
I use semolu flour.
It turns out very tasty!
