First of all, I take the margarine (butter, spread) from the refrigerator, cut it into pieces - 3 cuts along the piece and 4 across, put it in the freezer for 5-10 minutes, during this time I measure out the flour with baking powder and powder, prepare the liquid part of the dough.
In the dry parts I put pieces of butter from the freezer and ruble in the combine until large pieces of butter stop "tossing about".
Then I pour the liquid part into the bowl. The dough remains grainy, I dump it on the table, collect it in a lump, divide it in half and put it in bags in the refrigerator. After curing, the dough becomes more uniform and suitable for rolling out.
Sweet chopped dough is a classic for apple pie, but baskets with different fillings were also made.

For unsweetened dough, the best filling for us is an onion and an egg, and the quiches are delicious.

This amount of dough is enough for two closed cakes with a diameter of 22 cm.
The dough perfectly tolerates freezing, it even seems to me that after freezing it somehow becomes more noble. After I once baked a pie on a dumpling dough, now I ALWAYS sign packages "sweet chopped dough", "unsweetened chopped dough", "dumplings", "yeast", "bread" and so on ...

For some reason, baking in butter, it seems to me sugary creamy, but in the spread-margarine version, I "don't hear" butter (although now such butter makes it difficult to talk about its creaminess).Naturally, I don't eat margarine in its pure form, but only margarine is used in baked goods! So, there is no definite answer - everyone is free to use the fatty part of the dough at their discretion, here the lard will do!
