Ingredients

flour 130 g
powdered sugar 50 g
corn starch 8 g
lemon zest 1 tsp
vanilla seeds 1 pod
salt pinch
chilled butter 85 g
filling
mango (puree) 1 PC
lemon (juice) 1 PC
eggs 2 pcs
flour 20 g

Cooking method

  • Preheat oven to 180 degrees. Cover the 15x18 cm form with parchment paper.
  • Cake dough.
  • Combine flour, icing sugar, cornstarch, salt, lemon zest, and vanilla seed in a food processor. Then add cubes of cold butter and mix until crumbs.
  • Spread the dough into an even layer in a mold and tamp well. Bake the cake for 18-20 minutes. Remove the finished crust from the oven and lower the oven temperature to 170 degrees.
  • For filling.
  • Beat eggs with sugar, add lemon juice, mango puree, sift flour over the mixture, mix everything together. Pour the filling over the finished crust and bake at 170 degrees for 25-30 minutes.
  • Cool to room temperature, then refrigerate for several hours.
  • Sprinkle with powdered sugar on top and cut into equal strips.
