Ingredients

Water 300 ml without 2 tbsp. l.
Apple cider vinegar (or wine) 2 tbsp. l.
Vegetable oil 1 tbsp. l.
Dry kvass concentrate 1 - 2 tbsp. l.
Leaven ("eternal") 4 tbsp. l.
Rye flour 200 g
Wheat flour 300 g
Bran (optional) 2 - 3 tbsp. l.
Salt 2 tsp
Yeast 2 tsp

Cooking method

  • At one time, I was also puzzled by the problem, to choose the perfect rye bread for myself, all rye, which were baked according to different recipes from the site or from a book, were delicious, but not the same as I like, and then experiments began, add sugar - subtract sugar, salt add - reduce salt, with and without vinegar. As a result, I made for myself a recipe for rye bread that almost completely satisfies me, my husband and children also like it, but they are almost omnivorous.

Try oven in a sealed ceramic container.

Advantages - In a closed container with a small amount of headspace, hot steam is quickly generated, giving a crisp and porous surface. It works well to bake moist rye dough - so moist that you need to put it on with a spoon. The result is a coarser, very soft bread with a thin crust.
But it bakes well and rye regular consistency
Put the bread in a shape slightly smaller than a ceramic dish with a lid, lined with baking paper, oiled and abundantly sprinkled with bran.

Put a ceramic mold with a lid in a cold oven on a wire rack, warm up for 30 minutes at 250 degrees. Transfer the risen (2 hours, it is best to let it stand) bread directly in the paper into a hot pan (not scary if the paper sticks out), cover, bake for 30 minutes, then lower the temperature to 230, remove the lid and bake for another 15 minutes

If there is no cover - can be covered with foil
