FrauMieze, I will regret that everything depends on the recipes, I always have a crust with a crunch. Go over the topic, maybe pick up something

Can you please tell me if it is possible in this bread maker to get bread with crispy crusts when it breaks straight if you press?
FrauMieze, good day! Welcome to the Bread Maker! Try to bake bread on the "French" mode (take any recipe from our forum), as a rule, it is the French bread that produces the crispest crust.

Yesterday I was just baking milk-kefir wheat bread according to your recipe in the French mode and it turned out delicious but without crunch. So I think it might be because I didn't get it right away, but pulled it out after 40-50 minutes?

Yes. : girl-yes: This is because of this. I always take out bread after the signal. The crust is good. But, as I advised you earlier, French bread, due to the lack of baking and specials. the crust is even more crispy. Although, perhaps your husband will like any bread taken out of the oven immediately after baking.
The photo shows a very cute bread. Congratulations!

Thank you very much, I'll try to get it right away, I hope this will fix the situation

Bread with sour cream from Shelena, slightly modified - the amount of dry yeast reduced by 50%

Lena, I used fermented baked milk here in the rye-wheat recipe with young, this is really something, much better than kefir. I didn't have time to take a picture, my family was in full force and they were able to do it in one go
Shelena
Timofey, for such a large family, even a kilogram loaf will not be enough for one time. : girl_wink: I also like fermented baked milk in breads, but, alas, I rarely bake on it, because there is no expired one (we drink quickly). But, of course, bread is softer than kefir. Try using whey, which is delicious too. Only for wheat, dilute a little with water so that it is not sour. And when used for rye, you don't even need to add lemon.

A regular set, if the sons are going in full force, such a set is enough for one meal
severyanka76
Hello everybody! Shelena, I am to you for help - I baked rye-wheat on fermented baked milk (4%) according to your recipe in two buckets, but the roof fell through and inside it turned out to be cool. Can you tell me what could be the reason? Thank you.
Shelena
severyanka76, Hello. The reasons may vary. I hope that you have chosen the correct mode, which means that this is excluded.
Most likely, you have turned out to be too liquid kolobok (a collapsed roof, biting ...).Flour and fermented baked milk are different for all of us, so I always try to show a photo of a kolobok for a sample in recipes. Look again, make sure you had the same. It is different from wheat.
Tell me, have you measured the ingredients on the scales? And was the yeast tested?

Buloshnik, you can't relax there with such a team. The bread maker is clearly not idle.
Tasha1111
Here's a little bread I got yesterday according to the recipe "Darnitsky for my husband". I reduced the yeast by half and the result pleased - the roof is what you need

Tasha, the bread is good! Handsome! Did it turn out delicious? Does it taste like a store?

Shelena, but a recipe or a reference is possible. What a beauty
L. Laura
Tasha1111, forgive the question for you, not Shelene. I pressed the wrong button
Tasha1111
Thanks everyone for the feedback!
severyanka76, The bread is delicious, but it is still different from the store bread (although with what to compare, it seems to me that the bread of different manufacturers also tastes differently).
L. LauraHere is a link to the recipe:

This time I did it strictly according to the recipe (only I cut the yeast by almost half and pressed it) + replaced 50 grams of flour with semolina. Kneading on the "Pasta" program. The author of the recipe writes that then turn off the bread maker and leave the bread for proofing, I turned on the rye mode (it is heated for 30 minutes at first) for 20 minutes, then turned off the oven and waited for the dough to rise, then turned on the baking.
And one more secret: I baked bread in the form of L7, which I bought after reading the post Fantastic from page 23 of our topic.

Before that, I baked this bread, replacing exotic additives. Replacement tips here on page 1:
https://Mcooker-enn.tomathouse.com/index.php@Itemid=126&option=com_smf&topic=72478.0

It also turned out, but nevertheless I reduced the amount of yeast every time. this is how he is in the bread maker

Shelena, please tell me how to use the home program for making yogurt? I can't figure out how to set these 15 modes
Shelena
FrauMieze, re-read this experiment carefully:

There is an algorithm for installing each stage. I think this should help you.
FrauMieze
I tried this algorithm, maybe something is wrong with the brains)) so I select stage 15 with the menu button and then what? How to choose 15 more stages at the 15th stage with arrows I can't figure out at all
Shelena
Quote: FrauMieze

... so I select stage 15 with the menu button and then what? How to choose 15 more stages at stage 15
So
"2. Press the "Start / Stop" button for 2 seconds. Appears on the screen "1 00" (stage and preset time). Select the desired time using the arrow buttons "up", "down" (for yoghurt it is "0"). "
And then according to the algorithm.

Quote: FrauMieze

I can't think of arrows at all
Arrows will appear when you start selecting stages.
Look at the instructions - there is a good description of how to work with this mode. Press the buttons as written. Everything should work out.
Unfortunately, I cannot put additional explanatory photos, because I am very far from the HP.
Buloshnik
And ideally, you can bring your husband to study, and in the future to learn how to use a complex device

Good day! I bought a bread maker, thanks to your site I learned how to bake bread, I want to ask for recipes for sweet pastries - muffins, etc.

Hooray, it worked. I was not satisfied with the last kulich and decided to try other yeast. I added margarine instead of butter (to reduce the cost)
Cognac instead of liquor. I removed the zest completely. I reduced the vanilla sugar to 1 tsp (I didn't have the patience to shake more from my jar).

And at the very beginning it seemed to me that the right bucket was watery, and the left one was cool.

Bread maker Polaris PBM 1501D (reviews and discussion)

I added half a spoonful of flour to the right and a spoonful of milk to the left.

But still the left one was a little steeper. Visible in the puddle below.

All the time during kneading, she lowered the tube down with a spatula, because it seems to me that the upper part did not participate in kneading.

Interestingly, if this is not done, the batch will turn out to be normal?

She pulled out her shoulder blades and began to wait. The dough rose decently before baking.

And when the baking began, then, like a baker, it rested on the lid and grew together a little.

Hello everyone! Take into your ranks, yesterday you bought Polaris .. A separate story, how I baked my first bread, but, in spite of everything, the taste is excellent ... Correctly written here - beginners need to read the forum carefully))) I laid 2 times - the first since the flour turned out sooo much, I had to throw out the dough. The second time I forgot to put the knives in, I had to shift everything, wipe it, lay it back .. In short, a classic of beginners' mistakes. And now there was a problem - I had dough in the mode, after the beep, the display stopped showing the time and started mixing continuously .... Only the disconnection from the network helped, the program continued ... What should I do now? I have 2 weeks to check - should I run now to change the stove or still continue checking it ??? Judging by the forum, this often happens with this stove .. Tell me, please
Tasha1111
Good afternoon, dear bakers! And I want to boast again. I printed this recipe from Shelena long ago, but I only baked bread yesterday! This:

https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=384253.0

Elena, thanks for the recipe! The bread turned out to be delicious (just like that) to the taste, the best of the rye-wheat that I have tried! Baking in programmed mode. Only the dough after kneading was transferred to the L7 form. For lovers of the store-bought taste of bread (asked here) try this recipe, it is the most ... I wrote it down in my favorite recipes
Well, actually what happened

Natasha, what a beautiful bread you have turned out. Did you put Form L7 directly in the bread maker or in the oven? Sorry, I'm choosing a bread maker for now, so I didn't understand this moment
Tasha1111
Nadya_K, after kneading, put the dough into a mold and put it in a bread maker.
Shelena
Natasha, bread is incredibly handsome! I'm glad I liked the taste.
I will definitely try to bake in this form.

Anastasia, if this glitch did not appear anymore, then I would leave the stove. But, of course, it's up to you.
Nadya_K
Natalia, I realized thanks.

Girls, and plastic does not smell in this HP?
Lyolik
the numbers on the display also disappeared once. and tell me how long it takes you to knead the dough.?
Lyolik
how do you load ingredients into it? sequence. how about the book?
Tasha1111
Nadya_K, doesn't smell to me, if only like all new technology at the beginning.
Lyolik, I try, but it's not important, sometimes I confuse and put it like in Panasonic (there is flour first). I try not to let the salt come into contact with the yeast.
Quote: Lyolik
and tell me how long it takes you to knead the dough.?
There, in time, 10 seconds in my opinion (according to the book).
Quote: Shelena
Natasha, bread is an incredibly handsome man!
Thank you, Elena! Itself was delighted.
Lyolik
Why do the numbers disappear? It disappeared again. Need to change? Or is there another reason for this? and tell me which paddles to use in a large form, and which in a small one.?
Lyolik
girls, how do you store hot bread?

Please tell me, two small buckets, is it possible in one small 500 gr. to bake bread in a bucket, not to put the second in the oven?
severyanka76
svetlanatep, the instructions say that it is impossible. If anyone has tried to put one bucket, respond as it is. Also worries about this question.
L. Laura
As far as I remember, Shelenochka described her experiments and filled one bucket, but the second did not. But she put both in the oven. Only the full seems closer to the dispenser. I'll try searching for it now
