Diluted a bit too much kefir sourdough on rye flour.
It was late in the evening, I decided to put the dough on the pancakes.

Half a glass of rye sourdough on kefir, 2 cups of warm water, 5 g of pressed yeast (= 0.5 tsp. Dry), 2 tbsp. l. fructose (sugar), thickened with wheat bread flour to a creamy consistency.
In the morning I added 500 ml of warm milk, 3 eggs, 1.5 tsp. salt, 2 tbsp. l. fructose, 2 tbsp. l. peanut (you can olive or sunflower) oil and flour to a thick dough for pancakes.

She let it stand for about 15 minutes and baked 2 plates of pancakes.
And the dough does not end ...

Less than half of the test remains.
I added flour to the eye until a soft dough, put it in a bread maker (in appearance - a bun for a loaf of 750 g) and set the Sweet pastry mode for 2 hours 50 minutes, medium loaf and crust.
After 3 kneading, greased with milk and sprinkled with sesame seeds.

When baking began ... I put the loaf under the lid, baked it ajar (I laid a wooden spoon), and then wrapped the sides with foil and baked it in the oven ... I barely put it into the oven on the lowest shelf, a very tall loaf ...

a meat thermometer will work.
The inside of the finished loaf should have a temperature of 94 - 96 degrees.

Right. If we go back to the definition of what a sourdough is, it is a peroxidized dough (see the topic Uterine leaven).

When you bake dough pies in the usual way, they don't smell like anything other than well-ripened dough.

I also prefer not to eat too much. But I bake cakes almost every year - as a tribute to tradition, as a touch to the origins, or something, if I may say so. I bake and distribute to relatives, I leave only one for myself.
