Creme brulee in a multicooker Bork U700

Ingredients

Yolk 1 PC
Warm cream (20-33%) 100 ml
Sugar with natural vanilla 20 g

Cooking method

  • 1. Whisk the sugar and yolk together as soon as they poured... I took sugar Dr. Oetker brown with natural vanilla.
  • 2. Add warm cream (to help dissolve the sugar) and whisk gently without beating. Try to keep the whisk upright for this. The author writes that 20% cream tastes best, I took 33%.
  • 3. Strain the mixture through a fine strainer and pour into molds. The smaller the mold, the faster the dessert will be prepared.
  • I filled it in 100 ml Tefal yogurt jars (*).
  • 4. Place a clean handkerchief at the bottom of the bowl, position the jars as firmly as possible so that they do not touch the sides of the bowl. Pour water into the bowl up to the middle of the dessert jars.
  • 5. Run the program Multi-cook 95 deg 40 minutes.
  • 6. At the end signal, remove the jars of thickened crème brulee and let cool. Then put them in the refrigerator for 3 hours.
  • 7. Before serving, the crème brulee can be sprinkled with powdered sugar or, if equipped with a burner, brown sugar and caramelized.

(*) My jars from Tefal made me jittery, since their base is very small, unstable, and the bottom of Boryusik is not quite even, rising to the center. The handkerchief on the bottom served as a buffer between the glass jars and the hot bottom, and also increased friction to prevent them from slipping against the hot sides.
Here in this photo, where I just took out the jars from the bowl, you can see that the level of the frozen cream is not horizontal:

But this system made it clear that at 95 degrees there is no strong bubbling in the bowl, otherwise my unstable jars would simply fall
At the same time, boiling in the bath was unambiguous, since at the end of the program steam was released
For the future, I plan to buy more stable portioned creamers, since the dessert clearly fell in love with my sweet tooth, and my son almost immediately asked me to prepare "such" a 3-liter jar for him
