Quick cherry pie with Swiss meringue

Ingredients

flour 200 g
sugar 200 g
natural yogurt (thick) 150 g
butter 100 g
eggs (large) 1 PC
egg yolks 2 pcs
baking powder 1 tsp
lemon peel 0.5 h l
vanilla sugar 0.5 h l
frozen cherries 150-200 g
For the meringue:
egg whites 2 pcs
sugar 125 g
vanilla sugar on the tip of a knife
almond flakes for sprinkling
baking sheet 34 x 24 cm

Cooking method

  • 1. Beat the softened butter with sugar, add the yolks and the egg and beat together. Then add flour mixed with baking powder and vanilla sugar, yogurt (it is more convenient to do this alternately - first part of the flour, then part of the yogurt, etc.) and lemon zest.
  • 2. Put the dough on a baking sheet lined with baking paper and spread out the cherries and place in an oven preheated to 180C for 20-25 minutes.

  • 3. During this time, prepare the meringue. Combine egg whites with sugar and put in a water bath, warm up for 2-3 minutes. Beat for about five minutes - until the volume increases by 4-5 times. Then remove from heat and continue whisking for another five to seven minutes. Remove the browned pie from the oven, spread the finished meringue over the surface, sprinkle with almond flakes and return to the oven for another five minutes.

  • 4. Cool the finished pie and serve, cut into portions.

Note
