Croxetti d'al canto (Croxetti)

Ingredients

Croxetti 500 g
chicken fillet 300 g
avocado 1 PC
cream 200 ml
walnuts 1/3 cup
hard cheese 1/2 cup
garlic 2 teeth
dry white wine 100 ml
italian herbs

Cooking method

  • My friend said: “The first trip to Italy will divide your life into“ before ”and“ after. ”And so it happened, Bella Italia became for me a synonym for bliss, pleasure and admiration. And this is not only about the incomparable climate, beautiful landscape, hospitable people but also about incredibly exquisite cuisine. Now, in anticipation of the next reunion with this blessed country, I often create Italian delights in my kitchen. We lived in a small family hotel, and the hostess, an elderly Italian, noisy, curious and sincerely attentive, often spoiled us with authentic dishes prepared according to old recipes of her grandmother, here is one of them, named after the place where we rested.
  • Cut the chicken fillet (preferably not the breasts, but more juicy parts, meat from the thighs, for example) cut into small pieces, fry until semi-cooked without adding any fat. Season with salt, pepper, add ground nuts, garlic passed through a press and pour in wine. Simmer under a closed lid for 10 minutes, add Italian herbs, pour in cream (I had 20%), sprinkle with grated cheese, stir, simmer for another 10 minutes. Peel the avocado, cut into strips and add to the chicken, simmer for another 10 minutes.
  • Boil Croxetti * in salted water for 10 minutes.

Note

*Croxetti (in the Russian manner of Croxetti or Corsetti), flat round plates, "printed" with a wooden stencil, appeared in Liguria, in Northern Italy along the border with France, during the Middle Ages. In the past, they were made by local peasants and used by aristocratic families as a display of wealth and status. As a rule, the imprint on the "medallions" was made in the form of the family coat of arms. Currently, there are many options for prints, on the one hand - the manufacturer's seal, on the other - various symbols of the country: fruits, family initials, sailboat, sunset, mountain ranges or palm trees. I had pasta brought from Italy, these are

I would love to try a carsetti (or croxetti). Is it purchased from you in the photo?
I will make the meat according to the recipe, and replace the croxetti with pasta. Or which is better?
Kara
tasha, in principle, can be replaced with any paste. Croxetti differs from other types of pasta in that they are flat and rather large, they say that due to their shape, they hold more sauce. I have purchased ones, however, in Italy. But, in our large supermarkets you can also buy Croxetti
I'm waiting with a report!
