Gingerbread Roulade with Dulce de Leche Cream Filling

Ingredients

eggs 4
flour 2/3 cup
ginger 1 tsp
cinnamon 1h l
baking powder 0.5 tsp
salt 1/4 tsp
Brown sugar 0.5 cups
butter (melted) 2 tablespoons
syrup 2 tablespoons
Dulce de Leche 3/4 cup
powdered sugar
Lemon Sauce:
sugar 2/3 cup
corn starch 4 tsp
lemon juice 1/4 cup
lemon zest 2 tsp
egg yolk 2 pcs
butter 6 tbsp. spoons
low-fat cream or milk 1/4 cup

Cooking method

  • 1. Separate the whites from the yolks. Line the bottom of the baking dish with parchment, grease and sprinkle with flour. Combine flour, cinnamon salt, ginger baking powder in a small bowl.
  • 2. Preheat the oven to 350 *. Beat the yolks with brown sugar using a mixer, add melted butter and molasses. Combine the flour mixture with the yolk mass.
  • 3. Beat the egg whites until firm peaks and gently combine with the dough.
  • 4. Bake for 12 minutes.
  • 5. Put the finished cake on a towel and roll into a roll. Allow to cool.
  • 6. Roll the inside with cream and let it soak for about an hour. Then grease Dulce de Leche.
  • Lemon syrup.
  • 1. In a small frying pan, combine sugar and starch, add water, zest and lemon juice. Cook until thickened.
  • 2. In a bowl, beat the egg yolks with a fork. Gently add the yolks a small amount of sugar-lemon mass, then pour everything into the pan and cook over low heat for 2 minutes. Add butter and wait until it melts, then add milk or non-fat cream.
  • Serve the sauce warm!

The other day I just tried to cook Dulce deLeche, I liked this cream better than many brands of condensed milk (more natural for sure), I decided that I would use it further, and here is your recipe ... And the sauce is interesting, add gelatin will be lemon cream (also very tasty thing). But with the cream, I did not understand how much where. and which simple ones - for impregnation or what?

I also have a maximum 250. turned on the oven before starting to cook the dough, set max t / baked for 12 minutes. so no need to worry everything worked out.
