Plums 1 kg
Sugar 1 kg

Star anise 2 stars

Cooking method

Peel the plums, mix with sugar and spices in a container suitable for the oven. Cook at 150 degrees for 1-1.5 hours. The recipe was slightly corrected by me and I will write how I did it.

I read the recipe in some culinary magazine and he impressed me with the fact that this jam can be cooked in the oven. I took about 2.5 kg of plums and sugar in a 1: 1 ratio, left the spices in the indicated volume, I was afraid that it would turn out too spicy. According to the recipe, the plums need to be peeled, mixed with sugar and spices and put in the oven right away, but I was strained over time, so I just peeled them, covered them with sugar and spices (I forgot to add vanilla sugar!) And got good at work, deciding to continue in the evening. When I came home from work, I put the whole thing in the oven (I used a large stainless steel tray). I'll make a reservation right away that I probably didn't mix the plums with sugar right away, because there was very little syrup at the bottom of the tray in the evening, but I decided not to add water, and I did the right thing ... According to the author of the recipe, the jam is cooked in the oven 1-1.5 hours at a temperature of 150 degrees - nothing of the kind, after an hour, even the sugar did not completely dissolve, despite the constant climbing into the oven and stirring with a large spoon (or sugar producers are bastards) and there was very little syrup. Quietly cursing, scolding myself that I was led to a beautiful description and the extraordinary ease of cooking yummy, I turned off the oven and went to rest ... In the morning, without really waking up, I flooded into the kitchen, attracted by the extraordinary aroma ... I opened the oven - and there a full tray of incredibly tasty syrup, the sugar is still not completely dissolved (at the bottom), but HOW IT SMELLS !!!!! I didn't have much time, but I nevertheless turned on the oven for a short time, warmed up all this stuff and went to work, in the evening I will try to complete the process and will definitely report the results. Honestly, I never thought that such a combination of spices gives such an amazing aroma !!!! Now I don't even know if vanillin is needed here

Try it, girls! I got a lot of syrup - I did not boil it, but rolled it up separately in jars. I took something like "Hungarian" plums, didn't cook much, they turned out to be hard and fed through with syrup. This year I accidentally discovered a jar - the aroma has become weaker, but still tasty. Last year there were no plums at all, this year we hope for a harvest

By the way, last year I cooked from unimportant plums (I seemed to choose beautiful ones, but they turned out to be soft) - it was also tasty, but not that, I did not have enough elasticity in the slices ... or maybe we just got a sort of boiled down, in the end it turned out almost jam ...It tastes similar, but right there is the most delicious - the plum itself, resembling candied fruit Thank you for the reminder - look for sensible plums
