Turkey roll with pistachios, candied fruits and chili peppers

Ingredients

turkey (fillet) 1.0KG
pistachios 2 tbsp
cream cheese (Philadelphia) 100 g
chili peppers (fresh) 0.5 pcs
salt pepper taste
candied fruits (kumquats, lemon) 5-6 pcs
cognac 1 tbsp

Cooking method

  • 1. Cut the turkey fillet into a thin layer and beat off slightly. Pre-leave 100-150 g of minced milk. Salt and pepper the prepared layer, sprinkle with cognac.
  • 2. Pistachios, a piece of fillet and chili (remove seeds), grind with a blender, mix with cream cheese, salt and pepper.
  • Place the resulting minced meat on one end of the prepared meat layer. Put candied fruits on top and roll into a roll.
  •  (Brand 6051 multicooker-pressure cooker)
  • 3. Wrap the roll tightly with cling film, fix the ends with culinary thread and place in the multicooker bowl on the stand.

  • 4. Pour water up to mark "2" and turn on the "STEAM" mode, time 25 minutes, pressure 20kPA. Cool the finished roll, cut into portions and serve.

It is convenient (at least for me) to wrap a roll in a film. It does not melt, it keeps the juice inside well during cooking. If it's more customary to do it in foil, then do it in it. I did not use a sleeve for this recipe. You can do it in a hermetically sealed bag, just tie the roll tightly with culinary thread beforehand to keep it in shape.
