Due to the deteriorating health, the diet had to be changed, including the elimination of gluten. A couple of weeks ago I bought a Panasonic 2512 bread maker and started experimenting with it, so take home bakers and gluten-free people into your ranks at the same time.

The first two times I used the Schar "Bread-Mix". Both times the loaves turned out to be of the correct shape, rose well, but the result was not particularly pleasant. First, despite its hard crunchy crust, it was completely white and looked unappetizing. And, secondly, the bread was very dense, a little "damp" and did not taste very good. In addition, the composition of the mixture somehow did not inspire confidence. Therefore, mixes from the American company Bob's Red Mill were immediately ordered. And today is the first experiment with one of them. I liked the result so much that I decided to register and write about it. I hope that as you gain experience and further experiments, the bread will become even better, but this will obviously take a long time, and the information may be useful to someone right now. Moreover, I have not seen any references to this manufacturer in this thread.

So I used Bob's Red Mill's Homemade Wonderful Bread.

There is a bag with yeast inside the package, but since the recipe indicated on the package assumes their preliminary soaking in water, I decided to use the quick SAF-Moment. Later I saw that the manufacturer of complete yeast is still the same CAF, so perhaps the yeast is the same. Moreover, a bread maker is drawn on the package. I will use it next time.

Ingredients:

Water 320 ml.
Eggs 2 pieces
Olive oil 2 tbsp l.
Ready mix - 1 package (450 gr.)
Yeast 2 tsp (about 5 gr.)

I used the gluten-free bread program (No. 11 in my oven), the crust color is dark. I loaded the ingredients in the order they are listed, put the yeast into the yeast container. I sifted the mixture just in case, but since the sugar and salt remained on the sieve, I also poured them into the bucket.

Despite the not entirely correct shape of the dome, it looks much more appetizing than from the Shar mixtures. It also tastes and smells more like regular bread than the previous ones. The flesh is not as firm and slightly gray.

Bob's Red Mill has a very wide range of gluten-free baked goods. A huge number of mixtures, various types of flour and starch. I have already bought cornbread mix, next will be it. In the near future, I plan to experiment with adding amaranth flour.
I found out about this manufacturer at the beginning of the summer at the global forum on chronic fatigue syndrome (Phoenix Rising). There is a lot of discussion about unmodified potato starch, and people from all over the world have recommended this manufacturer as the best value for money. Everything is available for purchase at the renowned iHerb health goods supermarket. For those who are not familiar - they have very fast delivery to Russia (it takes 8-10 days to visit me in a small provincial town). It can also be useful for those who will make an order for the first time - if you indicate the personal code of another customer (for example, your friends, relatives, or any stranger) when placing an order, you will be given an additional 5% discount (this person will also be charged 5% bonuses). If you don't know anyone, you can indicate my code - MIK1387. If this is considered advertising or violates the rules of the forum - please, the moderator to remove my personal code, but leave general information about the discount. When I made the first orders, I did not know about it, I could save a little. Now, since none of my friends buy anything there, I use the code of a stranger whose review I liked.
The mixture used in this case costs about 240 rubles today.

All success and, most importantly, health!

A couple of questions to experienced colleagues.

1. Does it make sense to control the temperature inside a loaf for gluten-free baked goods? If so, what is the target? Also 96-98 degrees?

2. Bob's Red Mill contains baking mix and does not include yeast in the recipe on the package. Is this mixture suitable for use in a bread maker?

Thanks in advance for your answers.
Admin

1.There is no difference what the bread will be and on what, the crumb of bread is baked - T * 96-98 *

2. can be baked in a bread maker. But it should be borne in mind that such bread does not melt (like yeast bread), therefore, after kneading (preferably quick or manual), immediately put on baked goods, on the Baking program.

In my oven there is a program for the "Pelmeni" dough - only kneading for 20 minutes without equalizing the temperature and raising. Can I try to knead on it, then switch to baking? And a huge thank you for your help!
Admin

The best option is to knead the dough with handles in a bowl. For a gluten-free dough, you need a long kneading, since there is no yeast there. There is only baking powder and other flour (instead of wheat).
And transfer the finished dough to the x / oven and immediately bake.

The forum has recipes for bread made from other flour, gluten-free - look again.

nelli240280, uuuuh tyyyy, what a beauty!
Definitely a recipe in the studio !!!!
There is already a queue waiting toil.
nelli240280
Recipe:
125 ml milk (can be replaced with water)
125 ml water
70 g butter
Boil all this and add rice flour 150 g, stir vigorously with a spatula, the dough will immediately curl up. I mixed until smooth and then cooled.
Then add 4 eggs one at a time, beating with a mixer.
Spoon the dough onto parchment or paper trays (I bake eclairs in small paper trays).
Put in a preheated oven at 180-200 degrees for 30 minutes. Then I do 160_170 degrees in my oven and dry the eclairs for about 10 minutes. But it all depends on your oven. My old gas oven baked them for an hour on low heat.
All!
Fill the eclairs with any cream you like best. I use custard without flour.
Eclairs are damp on the inside and dry on the outside to taste. If she hadn't baked it herself, I would not have distinguished it from wheat. And I used to bake a lot of such custard pies on ordinary flour. This is my son's favorite cake. But, unfortunately, now we are diagnosed with Celiac disease under? (((

Got a question. Is it possible to bake eclairs without eggs? Suddenly someone tried
I don't even know if a flaxseed egg will help here ...
I thought to try, but decided to ask first.

Choux pastry without eggs for eclairs Cooking seitan (you can take ready-made gluten) - how to cook seitan: mix 400 g of flour and 250 ml of water and let it rest a little, then rinse. Do not cook. This makes about 135 g of raw seitan. Prepare linseed jelly: 6 tbsp. l. pour flax seeds with 4 glasses of water and cook for half an hour. While the broth is still hot, drain about 220 g of liquid into a bowl (this will replace 6 egg whites). Prepare the choux pastry in the usual way: in 2/3 tbsp. water, add a pinch of salt and 80 g of butter, bring to a boil and add flour, mix well and heat for a couple of minutes over the fire. Cool down a little. Add seitan to the choux pastry and mix with a blender. Then add jelly in parts. The dough for eclairs without eggs is ready. Grease a baking sheet with oil (or put baking paper). Roll up small balls of dough with wet hands and place on a baking sheet. Bake eclairs in an oven preheated to 200 degrees for 40 minutes. More details: 🔗

Hello everybody. Yesterday I became a happy owner of a Panasonic 2501 bread machine. I already baked Basic white on program 1, it turned out great. And today I decided to try to bake b / g bread on program 9. The child is allergic to wheat and many other things, it's a long time to list. This was one of the reasons for buying cotton, the oven itself was without glaze. bread. Plus, the allergist advised, as in the store bread he says there are a lot of unnecessary and not entirely useful ingredients and impurities. I did everything strictly according to the recipe. Now I took it out of the bowl and that's what happened. As it is not very, it seems to me, pale is okay, but the top is generally cracked. Hostess help, tell the helpless newbie what I did wrong? Or do you need to decumerate this program yet?
I don't know how to attach a photo (

Hello! I would like to share a recipe for a gluten-free rice-flax bread. I baked it for friends, they say it's very tasty, they ask for more))
Water - 250ml
Milk - 50ml
Egg-1 pc
Sunflower oil - 12 grams
Flaxseed flour - 100 grams
Rice flour - 200 grams
Corn starch - 50 grams
Sugar - 3 tsp
Salt - 1 tsp
Soda - on the tip of a knife
Apple, grated - 50 grams
Dry yeast - 5 grams
Sesame seeds for sprinkling
First, in a dough mixer I mixed liquid ingredients, sugar, salt, soda, yeast, apple at high speed. Then I added flour and starch, kneaded in a dough mixer. The gingerbread man turned out to be soft, but not liquid. I designed a loaf and put it in a silicone mold, oiled and sprinkled with sesame seeds. Gave it to distance for 45 minutes in a warm oven. I baked for 10 minutes with steam, 50 minutes at a temperature of 140-160 degrees (I have mode 4 in my electric stove) without steam. She took it out, took it out of the mold and baked it for another 10 minutes

Hello. A lot of problems were discussed on the forum, but unfortunately I did not find a solution for myself. In addition to gluten-containing products, my son cannot also all types of milk and any sour milk, butter by itself (we use soy milk), as well as buckwheat, rice, barley, oats, grapes, plums, onions, tomatoes, beets, all types of peppers, coffee, cocoa. This is common. In this regard, it is simply extremely difficult to satisfy the baby's need for bakery products. The child loves bread very much, but so far the most edible only rye peas. The rye cookies are wonderful. Corn pancakes. And perhaps that's all. Nothing more edible came out. There are a lot of recipes, but each practically has something that we cannot. Maybe someone has recipes that can satisfy our difficult requests. Or links to specific sites. I would be very grateful to you.

And yes, I forgot to point out that the boy was also checked. That is, for example, he does not eat wonderful rye pies, since he does not like cabbage, mushrooms, or potatoes in the filling, neither eggs, nor apples .... Age 4 years, stubborn to the point of impossibility, he cannot cram ..

Anna, I can give you an ice cream recipe, for which my colleague, who also has a child with digestive problems, regularly thanks me:
Any berries, fruits 300 gr (I love strawberries) freeze to ice, grind with a grinder designed to grind ice into flour, add sugar or sweetener to the berry powder, or Jerusalem artichoke syrup (whoever can) and pour 200 ml "non-milk" into it and mix again
This is how yummy it turns out:
Gluten Free Baking & Miscellaneous Dishes - Recipes & Tips
I have:
- frozen strawberries 300 gr
- non-milk 1.8% 200 ml
- Jerusalem artichoke syrup 1 tsp.

And when I baked, I really liked the baked goods made from coconut flour:

I really don't remember how I baked, but I remember that it was very tasty and fragrant
Even tastier than wheat
Google the information on recipes made from coconut flour, your child will definitely like it

Coconut, almonds, sesame seeds are also not allowed

Not milk can be substituted for soy milk, right? It's just not milk, it's oatmeal, you can't

Non-milk can be made from different nuts, seeds, cereals... Milk can also be made from rice, pearl barley, millet and so on ...
You need to pick a convenient product for yourself by typing.
And be sure preliminarily familiarize yourself with the "harm and benefits, contraindications" with each product, especially what consequences they can give.

Allergists claim that buckwheat is one of the most allergenic types of cereals. We believe in the best. And the diet is getting tougher.

Thanks for the advice about not milk, we will google how to make it from millet.

Almost all non-milk products are prepared according to the same recipe. Grind the groats into coarse flour, add water and bring to a boil, strain.
Here is an example of non-milk Rice milk

We have a theme "Soy Cow", according to this principle and cook Soy cow (apparatus for making soy milk, soy milk maker)

And you can search on the forum for other options not milk.

Hello hostesses. Today I baked a gluten-free pie ... it turned out delicious. See who can get milk - for a variety of homemade gluten-free menus, otherwise gluten-free bread is rarely tasty
This is what it looks like before baking.
Gluten Free Baking & Miscellaneous Dishes - Recipes & Tips

And so after
Gluten Free Baking & Miscellaneous Dishes - Recipes & Tips

Let it cool and enjoy ...

I made the dough from a pack of sour cream, a pack of butter and a gluten-free "universal" mixture from Garnets enough to knead a delicate, pliable, non-sticky dough
I made the filling from a pack of cottage cheese, rubbed 150-200 grams of feta cheese, 1 egg. Salt, garlic to increase appetite.
You can simply roll out the dough, put the filling, cover and in the oven until golden brown.
You can roll up, cut and bake like a roll, but today I made a puff type. She rolled out the filling to about 0.5-0.7 cm, put a little and rolled it in half, rolled it out again ... and so on four times until the filling ran out. I smeared it with an egg and into the oven. It turned out very tasty and fast.

We have been on a gluten-free diet for the 4th year. What was scary to remember. Gluten intolerance is that thing ... easier than celiac disease, of course, but also hard. And here you really understand that we are what we eat. Daughter pulled out of the afterlife on a b / d diet.
I wish everyone health and good mood!
