Grease a baking dish and line the bottom with paper. Beat 2 eggs with 100g sugar and beat until thick and light. Sift 15 g cocoa, 1 tsp gluten-free baking powder and 90 g rice flour, pour into a mold. Bake in the upper part of the oven at 220 ° C for 7 minutes. Turn over onto a wire rack and let cool.

Cake "Queen of Sheba"
Grease a round cake pan with a diameter of 20 cm with butter. Lay with parchment. Melt 100 grams of butter in a large saucepan with a thick bottom, add 150 grams of chopped chocolate and 100 grams of sugar. Stir over low heat until melted. Remove from heat and add 4 egg yolks, 1 teaspoon of vanilla essence, 1 teaspoon of baking powder and 50 grams of sifted rice flour. Beat 4 egg whites with a pinch of salt until firm and add to the dough. Pour into a prepared dish and bake at 180 ° C for 45 minutes, until the cake rises. Allow to cool on a baking sheet for 5 minutes, then remove and allow to cool.
Meanwhile, melt 50 g of butter over low heat, add 100 g of chocolate and stir until melted. Then add 1 tbsp of rum, stir until shiny homogeneous mass. When the cake has cooled, pour over the rum glaze and garnish with finely chopped chocolate or nuts.
